Curiosity and comfort have mindfully shaped the approach of this year’s Summer Menu.

Drawing from Mediterranean flavours, the Pimentos & Ricotta brings together sweet heirloom peppers and soft ricotta, layered with rocket pesto, queen olives, almonds, and charred grapes. The pimentos lend a gentle sweetness that carries the dish, while the olives and rocket introduce a light bitterness - creating a plate that feels bright, layered, and quietly expressive.

The Chicken Schnitzel offers a more familiar European comfort. Crumb-fried until crisp while remaining tender within, it’s served alongside a Caesar salad and finished with bacon for added savoury depth - a dish that feels both hearty and reassuring at the table.

Together, they reflect a menu that moves between exploration and familiarity.

Across the Summer Menu, ingredients lead the way - ripe fruit, fragrant herbs, and deeper savoury notes.

The Mango & Grapefruit Salad centres on fruit that thrives in warm weather. Sweet, ripe mango and the clean citrus bitterness of grapefruit is lifted by a honey-basil dressing and finished with a pistachio and peanut crumble for texture.

The Crispy Rice Salad (Nam Khao) draws from a Lao preparation where jasmine rice is crisped before being tossed with herbs, lime, and spice. It is paired with poached chicken and a house-made curry paste, bringing together freshness, texture, and savoury depth in each bite.

The Truffle Tagliatelle draws from a familiar European comfort. Fresh pasta is finished in a truffle cream and butter–garlic emulsion - a dish of earthy richness and depth.

From brightness to depth, our Summer Menu moves through the full flavour spectrum of the season.

Among the lighter expressions on the menu, the Compressed Watermelon & Burrata begins with watermelon rested overnight in its own juice with a touch of tabasco.

The gentle compression deepens the fruit’s sweetness while introducing a quiet spicy edge. Paired with soft burrata, a za’atar walnut crumble, and aged balsamic, the plate feels cool, bright, and layered.

At the other end, the Southern Thai Curry carries a deeper register. Built on a homemade sour curry paste, tamarind and chilli move through a light, savoury broth, served with jasmine rice and your choice of chicken or prawns.

Summer brings a certain clarity and lightness to the table, where cooking finds its character in contrast, led by ripeness, brightness, and the ease of the season.

Guided by this vision, our culinary team approaches this year’s Summer Menu through a lens of simplified comfort - food that feels clean, expressive and nourishing.

Moving between freshness and indulgence, the menu reflects the many moods of summer dining while gently travelling across culinary influences: Mediterranean brightness, Southeast Asian warmth, and a few comforting European classics, brought together in a way that feels both vibrant and easy.

Pickling is one of the oldest methods of preservation - a simple exchange between ingredient, acid, spice, and time. Across cultures, it has long been used not only to extend the life of produce, but to transform its flavour and texture.

In our kitchen, cucumbers are submerged in a vinegar brine with garlic, dill, mustard seeds, and black pepper for seven days. As they rest for a period of seven days, the cucumbers release moisture while drawing in the acidity and spice, developing a bright tang, gentle warmth, and a firm crunch.

Preparations like these form an important part of our kitchen practice. House-made condiments allow us to introduce contrast, texture, and depth - small elements that bring greater balance to a dish.

You will find these pickles in our Lamb Burger, where their sharpness cuts through the richness of the patty, bringing brightness to each bite.

A symbol of abundance and well-being across many ancient cultures and traditions, the Fig tree has long been associated with prosperity, nourishment, and shelter. Grounded yet adaptable through the seasons, it reflects a balance between resilience and growth.

Our Fig tree right outside the cafe was planted with this intention.

Drawing the outside inward, it brings ease, rootedness, and a sense of the living world into the space - a reminder that places feel most alive when they remain connected to the rhythms of nature, quietly growing, adapting, and offering moments of pause within the everyday.

Brioche sits at the intersection of bread and pastry. Classified as a viennoiserie, this enriched French dough traces its origins to Normandy, where eggs and butter give it a texture that is pillowy, tender, and gently sweet.

In our bakehouse, the dough is prepared fresh each day, allowing time and technique to develop its soft, airy crumb.

That structure makes brioche especially suited for French toast. It absorbs custard while holding its form, turning golden at the edges while remaining light within.

Paired with berry compote and vanilla cream, the dish balances richness with brightness - best enjoyed alongside a well-brewed cup of coffee.
