More than 130 years ago, a common man Mr. P. Ponnusamy Naicker of Sadarasspattinam probably vowed to slave the British with their own gastronomy! Hence was born, “Smith Field Bakery” in 1885 at the heart of old Madras. The bakery was believed to be named after British Officer E. Conran Smith largely to attract the sect of Anglo-Indians who were the then major consumers. “Smith Field”, today is a household name in the northern Chennai and is synonymous to ‘bakery’. Numerous bread, bun, and biscuits are baked to perfection every day as they were done a millennium ago, without preservatives. The bread and biscuits are delicacies themselves and the men behind these have vowed to carry on the legacy of Mr. Sadaraspattinam P. Ponnusamy Naicker without tainting it with modern technique…
