Millet chicken salad reciepe:
Because there’s protein-rich chicken and millet, as well as veggies and healthy monounsaturated fats from olive oil, this is a complete meal in one bowl. Good for lunch or dinner for busy health concious people.
Ingredients
4 teaspoons lemon juice
1 teaspoon lemon zest
2 tablespoons olive oil
1/2 teaspoon salt
1 small pinch black pepper
2 cups cooked millet
1/2 cup cucumber, diced
1/2 cup roasted red bell pepper, chopped (optional)
2/3 cup fresh coriander leaves, chopped
250 grams cooked chicken (left over gravied chicken or grilled chicken), chopped into bite size.
Preparation
1. Whisk together lemon juice, lemon zest, preferably olive oil, salt, and black pepper and set aside.
2. Mix together cooked millet, cucumber, roasted pepper, chopped coriander leaves, and chicken.
3. Pour the lemon dressing over the top and toss gently to mix.
Ingredient Variations and Substitutions:
Try a different cooked whole grain like buckwheat, Millets such as Jowar (Cholam in Tamil), Pearl millet (kambu), Finger millet (kezhvaragu), Kodo millet (varagu), Foxtail millet (Tinai), Proso millet (panivaragu), Barnyard millet (kudraivali) and Little millet (samai) or wild rice, red rice, even cooked barley in place of the millet for a different texture and flavor.
As you can see, this dish is versatile. You can even make it vegan. Just swap tofu or cooked beans in for the chicken.
Time saving Tips
Use pre-cooked millets and frozen grilled chicken strips to save time.
Make extra and freeze in single-serve containers to use for quick heat-and-eat lunches and dinners.
