Ingredients
Prawns
β’ Medium prawns (cleaned & deveined) β 250 g
For marination
β’ Ginger-garlic paste β 1Β½ tsp
β’ Red chilli powder β 1Β½ tsp
β’ Coriander powder β 1 tsp
β’ Turmeric powder β a pinch
β’ Salt β to taste
β’ Cornflour β 2 tbsp
β’ Curry leaves β few (slightly crushed)
For frying
β’ Oil β as required

Method
1. Marinate the prawns
In a bowl, add ginger-garlic paste, chilli powder, coriander powder, turmeric, salt, cornflour, and curry leaves.
Add prawns and coat evenly.
Rest for 15β20 minutes only.
2. Heat oil
Heat oil on medium-high flame for deep frying.
3. Fry the prawns
Add prawns in small batches.
Fry until they turn deep red, crispy outside and just cooked inside (about 2β3 minutes).
Fry a few curry leaves in the oil at the end until crisp and toss with prawns.
4. Drain & serve
Remove prawns and drain on tissue paper.
Serve hot with onion rings and lemon wedges.

Hotel-Style Tips
β’ For extra crispiness, you can add 1 tbsp rice flour if desired.
β’ For a bright flavour, squeeze lemon juice over the fried prawns just before serving.
β’ Do not over-fry; prawns cook very fast.
β’ Kashmiri chilli powder can be added for bright red colour.
