It is with a heavy heart that we announce the end of a mutually fruitful collaboration with Ilaka cafe. As they see a change in management and undergo renovations, BAkeRI will no longer be serving our baked goods at Ilaka. We are still very much open and taking individual orders for delivery to you and looking forward to interacting directly with you! ❤️

Very Merry Christmas Cake! It’s the third year running that we’ve soaked the nuts and fruits in rum a month and more to make this very special christmas cake. The recipe is from a dear aunt from Kerala and it’s the quintessential Christmas cake. It’s buttery, it’s spiced, it’s really good on the rum front, and it’s just the perfect treat for this holiday season. Baked only on order, limited in quantity, and only during this season! We still have (a very) few left for this year so give us a holler if you’d like to get one. ❤️

Some 20 years ago, on a visit to Chandigarh, I ate this strawberry chocolate (icecream?) cake at Monica’s that was like a dream! I never found it on their shelves again and have thought of it often in the past 20 years. It was that good. And today, in a bid to make something exciting for I think I may have recreated those flavours by accident in these strawberry chocolate cupcakes. The tangy sweet strawberry filling, the richness of a good dark moist chocolate cake, the creamy perfection of a simple chocolate ganache, IN EVERY BITE! The mouth drools! Made with fresh strawberries from .unalome these are devil’s food cake cupcakes filled with a strawberry butter filling and topped with chocolate ganache and a slice of strawberry.

Pound cake! This cake is one of those marvels that turns the simplest ingredients into something magical - just equal quantities of butter, sugar, eggs, flour and a bit of fresh vanilla and/or lemon for flavouring - and the results are beyond delicious. That dense crumb, rich buttery flavour, and yet one can eat slice after slice of it! Oh and add in a layer of homemade lemon curd to the cake tin and you have pound cake gold! It’s not a regular on our menu but it is a favourite we love to bake on order.

It’s not spectacular to look at, no. But this is still one of those cakes that has me absolutely in awe. Let me explain....

100% Whole wheat, no egg or dairy, so entirely vegan. No sugar. Sweetened only by dates. And sooo delicious! How is that even possible?

Introducing frangipane apple tarts! Frangipane is a thick almond cream. We make ours from scratch with butter and almonds. Just like the puff pastry that form the base of these tarts. If you’ve had our puffs or galettes, you Know that our all butter, super flaky, puff pastry is to die for. Introducing this mess on a plate called turtle cake. Turtle cake is a layered dark chocolate cake with salted caramel sauce and dark chocolate ganache dripping down the sides and roasted walnuts for this beautiful nutty crunch. It. Is. Divine. A friend who got to taste it in the trial phases called it the best cake ever. And that’s how he asks for it again. Because this is one of those cakes you can’t get enough of.

It recently came to our attention that this iconic cake was missing from this feed and so here we are rectifying this oversight.
The pineapple upside down cake is the original upside down cake and ours is a classic take on the cake. Tinned pineapple slices caramelised at the bottom of the cake tin in brown sugar and butter with a soft moist vanilla flavoured cake with the richness of butter. Basic. Perfect. Indulgent.

Cheli (black, female) and Topsy (brown, male) are street dogs of Bir and Bari that were last seen today, 12.05.2022, being forced into a black Fortuner by the staff of Camp Bir Billing in Bari. They have been forcefully and illegally relocated somewhere in a radius of 1 hour drive from here. If you see them or have any information about them please contact us asap. They are friendly and respond to their names. Thank you. Please do share widely with your networks in this area.

Pavlova’s had been on our to do list for many many months, maybe years, and we finally got around to doing them last week. Inspired by and her beautiful book we attempted the pavlova tutu as individual servings and we were smitten! These were filled with compotes made of wild golden raspberries from around our home and of mulberries from our trees, complemented with whipped cream of course! And the result was dreamy! Each bite a revelation that made you go for the next. We’re thinking of making this a summer regular. (The meringue doesn’t do well in humid weather so only till before the monsoon rains hit.) And doing it with summer special fruits.. mango pavlova anyone? (Can you imagine it oozing with aamras and cream?) Slurp!
