Experiences from Italy
2/3
Traveling through Italy made one thing very clear to me. Whether you travel for art, food, or adventure, Italy will stay with you.
I ventured out every trip to learn more about food and ended up taking life lessons. Italy has a rich variety of food. I tried loads of different things including wines, bread, sweets and many more things.
From local street bakeries to high end restaurants everything had a distinctive aroma and I like to call it the smell of Italy.
Took so many recipes and memories with me. This land is a people's place. It made me happy and stays with me forever.

Experiences from Italy
1/3
While Italy had some of my favourite spots but one of the most worthy for me was "Genoa". Being from a pastry background, 'Genoa' region was always on my wishlist. Its where the genoise sponge cake originated. Genoise is a simple sponge cake made with eggs, sugar, flour, and sometimes melted butter and vanilla extract. If made correctly, it's a light and fluffy cake that is frequently used in layer cakes. This sponge was taught right from our college days as this is one of the classic sponge and the most difficult one. It's moist, eggy, slightly sweet, and tempting to eat plain.
Getting to try the real regional taste of this one was a bliss. I can still smell that perfect vanilla aroma. They indeed say food is an experience.

After passing out from college and getting into Hyatt Regency Hotel Mumbai, I worked in the bakery and pastry department under ,who is one of the best pastry chefs in Asia, learnt and developed a lot of it under him and also under one of my mentor . Later after around one and half year got an opportunity to work in a cruise line which would go around the world, so to fulfill a dream of exploring the world cuisine I left for it, did four tours around the world seeing over 80 countries covering Asia, Europe, US, and a place that's totally at end of the world 'Antarctica'. After this extensive joyful experience of over 6 years, I thought to do something that's a dream of every chef... "Opening your own restaurant". So finally after extensive research I started my own restaurant in 2013 which ran successfully. Helped many other entrepreneurs start an outlet most of which are still running successfully.
Then came a time I thought to give back my hometown something in return for all the love and culture it has given me, so I am back to open a restaurant here in and try to give the city flavours and experience of a lifetime. So give us a chance once we open to serve you from my happy place... to yours.

Taking the first step towards the dream of becoming a chef was itself not easy. I cleared the joint entrance exam and got admission in one of the top HM colleges in India, IHM Gandhinagar. Under the guidance of some highly trained and experienced faculties, I learned the basics of food craft which would form the base of a never-ending journey of the learning experience of a craftsman. Finally, in the last year having various jobs in hand at the on-campus interviews, I chose to join the Hyatt Regency Mumbai for the start of a long journey of acquiring immense knowledge and learning experience for this craft.
College days, without any doubt, were full of lifetime memories and lessons. I made many friends, acquired many other skills and made the most out of my young age. I look back and see a hard journey but all I carry in my heart is the good I took from this place.
Putting out the next part very soon.

Born in a Marwadi family from Bikaner (and Bikaneris are already famous for their liking of food) in the city like Mumbai which is a pot of mixed cultures, I didn't have much of a choice than to explore the various cuisines right from childhood. From the long list of Gujarati snacks to the more austere Maharashtrian cuisine, the Udupi style food coming from the community settled in central parts of Mumbai to the famous desserts of Bengal, later coming of the Indo Chinese dishes and various other cuisines from around the world and having a friend circle who would like to go on a short and long vacation to various places in India, I had access to all of them being surrounded by such families during my early school days. It was not just the liking of the food to eat but also how the dishes were created. Asking all sort of questions that were related to food sciences right from childhood, like how does the khaman and idli batter to ferment, how do lentils cook faster in a pressure cooking, etc etc etc I would leave no stone unturned to annoy with my questions ;p.
Then came the phase when chef Sanjeev Kapoor made an entry on tv with khana khazana which grounded my base of becoming a chef during my early school days itself.

Will share the further story soon. Keep checking this space for further updates.
