PERFECTING these tarts cases have taken several months of efforts! Drained and exhausted, gave up and held back!
Chasing them to perfect was a big roller coaster! Yes, Seriously...
With Bangalore temperatures and humidity it was extremely difficult to maintain the pliablity of butter!
The butter should maintain a temperature of around 18 to 20°C while working with it!
And when it was cracked, more issues popped up!.🙀
Finally have been able to crack decent tarts that look good, professional and clean!
Yes, it takes practice, it's about micro-granularity that sets apart the winners and average. !
