Here’s introducing our first (and possibly the only!!) self-employment initiative. I know, I know, I am not a professional in this area, baking makes me happy and I thought of spreading the happiness to all of you out there. So, for all my friends in Bangalore, if you have a sweet craving and you are not counting your calories when you are eating, call me for a share of the “Sweet Life”!!!

I am not someone who strictly follows any recipe. Much to annoyance of the people at home, I try to prepare dishes with whatever is available at home. And one such example is using the humble Kasundi instead of English/ Dijon mustard for this potato and egg salad recipe. Kasundi is pocket friendly and always available at home. The pungency of the mustard is perfectly balanced by the tart of the vinegar.

The dressing I make in this video is very simple. Mix mayonnaise with kasundi, salt and pepper. I add some chopped green chillies too (Bengali genes!!). Mix it with boiled and diced eggs and potato and voila, lunch is ready. I did not measure out any ingredient, it was a Friday lunch I was making, so didn't bother myself with precision 😊

Once in a while you like to take a break from all the gluten free, multi grain, etc etc and just enjoy a slice of bread the way it should be. And the best version of that kind of a bread is Brioche. The eggs and butter gives it a rich texture and absolutely silky smooth taste. Not to mention the melt on your mouth french toast you can make with it 🤤

I looooooove baking breads and jump at the slightest excuse of baking them. So when the family demanded they want vada pao for Saturday dinner, I jumped at the idea of baking the pao from scratch.

The ingredients for the bread dough are:

1. 300 gms of apf
2. 160 gms of water
3. 30.gms oil
4. Yeast
5. Salt
Knead all the ingredients well either by hand or in a food processor.

It will take a good 20 mins to knead the dough even in a food processor. Takes even more when you are kneading by hand.

Once done, keep it for proofing till the dough doubles in size. You can even proof it in fridge for 8-10 hours

Once proofed, divide the dough in 8 equal pieces. I used a weighing scale to measure them. Each portion was about 55 gms.

Shape each ball and place them in a baking tray and set them aside to proof till they double in size

Brush the balls with milk or cream and bake at 200 degrees for 30 mins.

This is possibly the yummiest of all the salads I've ever made!!
For the base of the salad I used chopped cucumber, carrots, red and green bell pepper, sun dried tomatoes and cherry tomatoes, pineapples, sprouts and peanuts.

You can get creative here and add shallow fried prawns or paneer, blanched bokchoy or spinach, brocolli, corn kernels. The options are endless.

For the dressing mix 2tbspoon of peanut butter, 1tbspoon of soy sauce, juice if half a lime, chilli crisps and a pinch if black pepper. Add little water to get a thin consistency.

You can also add chopped garlic to the dressing if u like the taste of raw garlic. I am not too fond, so I left it out.

Add the prepared dressing to the salad and serve with boiled or fried eggs!!

The silky smooth texture of the peanut butter and its nutty flavour mixed with the sourness of lime juice and the heat of the chillies elevates the salad to a different level altogether.

I had totally forgotten about the salad dressings series that I was about to post . So here is the 2nd in the series. This is a very common dip, Tzatziki sauce. This sauce is used as a dip for kebabs and chips, however, I use it as a salad dressing and it tastes amazing! For the sauce you need:
Hung curd
Grated cucumber (squeeze the water out)
Garlic
Olive oil
Salt and pepper

The portions can be altered based on your taste.
Tasted heaven as salad dressing. You can even spread it on toast or use as a sauce for rolls! Give it a try and enjoy!

Ever since I started incorporating salad in my meals, I was at a loss when it came to salad dressings. You cannot always use the lemon juice-salt-pepper and I did not want to use mayonnaise or cream and I was looking for healthier options.

A lot of mindless internet hunting and reel watching later, I came across a few dressings that are unique and delicious. These are not my recipes. I came across these recipes as I was mindlessly watching reels. Here is the first one :

Mango, mint leaves, green chilli, salt, pepper, olive oil and honey. Make a paste in a mixer and store it in the fridge. Add water based on the consistency you want. U can add garlic as well (the original recipe had garlic). My taste buds do not like mango and garlic together, so I avoided it.
