I am not someone who strictly follows any recipe. Much to annoyance of the people at home, I try to prepare dishes with whatever is available at home. And one such example is using the humble Kasundi instead of English/ Dijon mustard for this potato and egg salad recipe. Kasundi is pocket friendly and always available at home. The pungency of the mustard is perfectly balanced by the tart of the vinegar.
The dressing I make in this video is very simple. Mix mayonnaise with kasundi, salt and pepper. I add some chopped green chillies too (Bengali genes!!). Mix it with boiled and diced eggs and potato and voila, lunch is ready. I did not measure out any ingredient, it was a Friday lunch I was making, so didn't bother myself with precision 😊
