The “art of the craft” definitely put us to the test this week! 🥐 Seasonal shifts usually just require a quick hydration tweak, but this time, the flour had other plans. After plenty of trials—and the big decision to switch to a new miller after years of consistency—we’ve officially cracked the code. The honeycomb is back, the flavor is perfect, and our croissants are exactly where they should be. To anyone who noticed a shift in our pastries this week, thank you so much for your patience and for sticking with us while we dialed in the details! ❤️
