The Countdown to Christmas is well under way.
My Christmas cakes are baked and more than have have gone out. I have received many, many appreciative comments.
Mama (my maternal grandmother), whose recipe I use, must be beaming proudly.

Marathon baking session last Friday
* Eggless orange cake to say thank you for a job well done
* An orange cake with chocolate decoration to celebrate a couple of organisational achievements as well as birthdays for the month
* a vanilla n strawberry cake for a little girl who is in the 'Frozen' zone and loves the colour pink
* a small chocolate n caramel cake for someone who had heard rave reviews about my cakes n wanted some that the family could enjoy
* an eggless strawberry n cream cake. ... And 4 doz eclairs

Chocolate n Caramel
This was a short order cake that went out today, less than 6 hours after it was ordered. Little Lyra loves chocolate and cats and so that locked in thd cake.

Mango n Cream.... A close rival to strawberries n cream.

This dessert cake was ordered with much anticipation by a lady whose neice n family, from the US, were coming to share a meal with her. She wanted a cake rather than a dessert because it is more celebratory.
Two layers of chiffon cake sandwiched a layer of cream n mango and then there was a layer of mango on top.

And the verdict was... 'The cake was a great success'.

Coconut n Pineapple, eggless cake.

Made this hatke flavour combination for a gentleman who enjoys different flavours and doesnt like icing.
In keeping with the cake flavours, i decorated the cake with pineapple flowers.

And the verdict was
It was a fab cake, couldn't stop at one piece! Loved the flowers too.
My dad loves Indian sweets so this was right up his alley

Made this cake for a KE member who was inducted at the last meeting. This cake is different from the above cake because it is my take on a black forest cake.... With strawberries.... This is how i customize cakes after a customer consultation.

As the mango season is winding down, i made this delicious Mango and Cream cake.
The mangoes were fresh organic mangoes that were delicious. Under the cream was 2 layers of chiffon cake sandwiching a layer of whipped cream n mango.

The Mum n Grandmum enjoys my cake and quiche and so her daughter, in the US, faithfully contacts me to order goodies for her mum

Colourful eats for a Colour-Filled afternoon.

A friend called to order snacks for an afternoon of painting that she was planning with friends. The discussion started with discussing typical children party snacks … just for laughs.

Finally we settled on
* a Vegetarian quiche. The homemade pizza sauce had many exciting flavours - beetroot and roasted bringal to name a few. Red and green peppers in a bed of cheese made for a colourful pizza
* Chicken n Mushroom quiche : a thin flavoured quiche crust, with a generous helping of chicken n mushroom and spring onions, covered with a sauce of egg and cream made for a delicious quiche. Here again the red and green peppers made it colourful
* A tropical dessert. A coconut cake for the base topped with a mousse of coconut milk and dairy whipping cream. The colour came through in the form of chopped malgoa mangoes and strawberries and mint…. Contrasting and vivid colours

Rishika messaged to say "The food was wonderful. Such a hit!! Thanks a ton for helping make my little brunch a huge success! Just wanted to drop a line saying thank you💕"

Spiced pineapple and Cream
Vanilla and strawberries, covered with chocolate. These were the flavours that ### chose to surprise her friends with, on their birthday.
she took a lot of care choosing the flavours that she knew each one would like.

The birthday girls enjoyed their cakes.

In Nov 2018, Arun contacted me to make a cake for his daughter Drithi’s 1st birthday. As you can imagine the cake was very close to his heart. This was my first fondant cake and Arun was really thrilled with the outcome. Arun’s cousin Raman tasted and remembered the cake. In June 2023 when Raman was celebrating his daughter’s 1st birthday he contacted me to make the cake.

Chocolate as a crowd pleaser was an easy choice. The difficulty came when choosing the flavour combination
Chocolate n caramel
Chocolate n strawberry
Chocolate n orange
Chocolate n chocolate
The last combination won the day. Then came the theme. Cocomelon is Aditya’s favourite cartoon and so that too was an easy choice. Raman’s wife Akanksha and I saw eye to eye on what was important in a cake … not too sweet and minimum icing. And no fondant. The cake has to be the hero.

So here is what I turned out for them. A dark chocolate with a filling of chocolate buttercream and covered with chocolate ganache. The Cocomelon characters were edible prints and some elements were made with modelling chocolate.

After the party Akanksha called to say how thrilled she was with the cake. It was the focal point on the table and received so many rave reviews wrt the taste and look. The proof of the pudding was in the fact that Akanksha’s father who doesnt like cake, asked for a second helping.

Akanksha has said she is going to order more cakes from me in the future.
