Activated Charcoal and Turmeric Coriander Sourdough

It's my first time working with Activated Charcoal and am quite happy with the results. The Charcoal doesn't really affect the flavor much but it does change the texture a bit, I had to increase the Hydration for this loaf as the addition of Charcoal made the dough more absorptive I guess.

Turmeric and Coriander adds a lovely yellow to the dough and the mild flavor really teases the senses.

Overall a fun baking experience. Looking forward to more black breads.

Our whole wheat sandwich loaf. Made with 100% Organic Whole Wheat.

Well, to be honest, this took quite some time to get right. Indian Whole Wheat Flour, owing to its weight and coarse nature, doesn't rise as much and as easily as All purpose flour. After multiple trials and guidance from senior bakers and friends, we've been able to normalize the recipe to get a good loaf of bread consistently now. The Sourdough really improves the overall texture and the taste of the bread.
