Our viennoiserie didn’t start in our kitchen. It started with lists, early mornings and a fair amount of travel - researching in our city and beyond. Trying the cult favourites. Discovering the hidden gems. Not to recreate, but to understand and arrive at our own version. To taste, observe, and ask ourselves: what should our version feel like?

Then came the testing. Butter trials, laminations that didn’t behave, folds that finally felt right. Learning the rhythm of the dough, the patience it demands and the quiet satisfaction of getting it just right. Slow mornings, floured counters and that unmistakable moment when the layers finally sing.
And now, it’s here. Our interpretation of viennoiserie - golden, flaky, thoughtfully layered and deeply comforting.

Rooted in classic technique, shaped by curiosity and finished with our own point of view.
Baked in small batches and available every Saturday & Sunday. 🥐✨

Bananas don’t get nearly enough credit.
If they weren’t always around, we’d probably treasure them more. They work with everything - caramel, dark or milk chocolate, peanut butter, hazelnuts… the list really is bananas.

With our Banoffee Entremet, we’ve reimagined the classic into a light yet indulgent layered creation. A fluffy banana sponge, banana compote, cheeky dulce de leche and dulcey mousse come together on top of a crunchy milk chocolate biscuit base.

The result? Comforting, familiar but with a bit of a glow-up.
