Our artisanal bread is handmade in small batches, with challah being taken. Its sole ingredients are flour, water, and salt - not a litany of ingredients and preservatives. It is naturally fermented and leavened, breaking down starches and gluten and leaving the consumer with healthier and easier-to-digest bread. And it tastes much better than the industrial bread readily available in the supermar

ket. Our coffee is sustainably and ecologically roasted and supports local Ethiopian businesswomen. Our sourdough whiskey chocolate chip cookies are 70grams each, are dairy, made with free-range, organic eggs, and finished with Maldon Salt.

Super last-minute preorder of organic fruit and apple juice for pickup in the centre of Modiin tomorrow 16:00-18:30 (I will send the address in the order confirmation). Every challenge that seems to be thrown at us - rockets, fires, 2336 hacking attempts in the last 5 days alone, a cold storage debacle (ongoing but much improved) is met with amazing responsiveness from friends and families who want a relationship with their farmer and to put healthier and locally grown food on their table. Weā€™re trying to understand what the local demand is, if our wheat got enough rain so we can harvest, mill it, and bake bread with it. Basically, a lot going on.
