The secret is out!

Grateful to be featured in , and to for supporting the piece and shining a light on what we’re building.

For those who’ve just found us, I’m Seamus, and this is Plur. We’re a small bakery doing things a bit differently. We don’t buy flour, we grow it.

We plant and harvest wheat, mill it ourselves, and bake from that. Everything starts in the field and carries through to the loaf.

We use the grain to the best of its ability.

What really shapes it all, though, is the community around us, it’s a shared space where you can pick up bread. We bake for the people here, and with them. Conversations at the counter, familiar faces each week, and feedback that genuinely shapes what we do, it all feeds back into the process.

We work out of a pub, which has been a big part of the community long before we arrived and we are grateful for John and Mary for letting us use the space each week. It’s not a traditional bakery setup, but it works. The space shifts depending on the day, mornings become a place for bread and coffee, weekends take on a different rhythm. We use the space creatively, building something that feels open, flexible, and rooted in the place itself.

It’s simple, but it means a lot to us.

Good soil, good grain, good bread, and a strong community behind it.

‘Galway Land Wheat’ is the name and from what I’ve heard, it’s an Irish heritage winter wheat. There isn’t much written about it, but the name suggests it’s a landrace from Galway. It was probably collected from growers in the area, and when it was being added to a seedbank, someone might’ve just written it down as “Galway Land (race) Wheat.”

I’m told it would have been grown by small farmers for their own milling and baking, with seed saved from year to year and slowly adapting to local soils and weather. To them it was simply wheat. If you asked where it came from, they’d name a neighbour or family who had it before.

People say it was only with the introduction of shorter modern wheats that the old landraces started to disappear. Galway was never really known for wheat, but older generations remember growing it, milling it fresh, and baking bread from it.

This grain is grown by , who’s doing all the hard work keeping it alive.
If anyone has old memories or stories about wheat growing in Galway, I’d love to hear them.

This one’s made with 80% Galway Land Wheat and 20% Mariagertoba, at 70% hydration (which could definitely be pushed higher).

Hey everyone! Just a heads-up: we’ll be closed this Saturday the 11th, due to an another power outage in Borris.

Because of the nature of our little bakery and coffee spot it’s just not possible for us to open.

We’ll be back to normal next week.

Moving along into autumn season with these new bakes,

• Hedgerow jelly & brown butter cream bun. All the good stuff Hawthorn berries, rosehip, crab apple and blackberry in one bun.

• Treacle tart made with leftover rye bread, walnuts, and dates.

• Pecan maple twist

• Semolina cake with apple butter centre using our own milled semolina and apple butter.

• Pumpkin pie made with pumpkins.

• Cinnamon maple just because it my favourite
