Egg Sponge.
5 eggs.
5 oz Castor Sugar.
5 oz S.R.Flour with a 1/2 teas extra of baking powder added.
2 x 8 in sandwich tins.
Oven 160° fan.
Baking time 12 min.

Hi everyone.
Just an update on the Books situation.
Im extremely low in books.
Cant see any available at Christmas Time this year.
So if you need one, or the set you had best purchase now.
Mothers Day is coming up and maybe your Mom or your Nana would like one.
They are going back up in price end of March due to print and stamps increase.
So if your buying one its €12.
If your buying Book 1 & Book 2 its €20.
It will be €25 end March.

Sultana & Cherry Fruit Loaf

6 oz Butter.
6 oz demerara brown sugar.
3 lg eggs.
9 oz Self Raising Flour.
3/5 tab milk.
10 oz Sultanas.
3 oz chopped cherries rolled in a tab flour.
1/2heaped teas mixed spice.

2 x l lb loaf tins.
Baking time 40 min.
Cover after 30 if needed.
Oven temp 160° fan or whatever you normally bake at as all ovens vary.

Cookbooks available until the end Feb for €20 for the 2 postage included.
On March lst they will be going back up to €25 postage included. ( postage gone up sorry).

DOUBLE RECIPE FOR A LARGE FAMILY
Recipe for Pancakes.
8 oz Plain Flour.
1/4 teas salt.
2 beaten eggs.
I pt plain milk.

Put in fridge for 30 min before cooking pancakes.

Spray for pan.
Use a hot pan.
Cook for 2 min on the lst side.
1 min on the 2nd side.
Put on a sheet of icing sugar put choice of topping in and roll.
Squeeze a little lemon if liked.

Mummy Old Time Favourite Stuffing.
Page 39. Book 1.

Ingredients.
16 slices of good qualury bread ( 1 lb. 4 oz.)
3 lge onions or 5 medium
Cut and diced .
14 oz block butter cut into chunks.
1 & 1/2 tablespoons of dried mixed herbs.
1 tab black pepper.
NO SALT.
1 chicken stock cube melted in a quarter cup of boiling water.

Mars Bar Slices.
Tin size 8 x 8
And.
Tiffin Slices.
Tin size 6x4 or 6.

Mars Bar Ingredients.
7 Mars bar i used the 4 in a pkt size. Use the 8th one on top for decoration.
4. Oz melted milk choc.
6. Oz rice krispies.
4. Oz blick butter melted.
1 tablespoon of golden syrup.

1 & 1/2 blocks if milk choc melted for the top.

Tiffin Squares.

4 oz block butter.
6 tab golden syrup.
3 tab icing sugar.
3 teas cocoa powder.
8. Oz crushed into crumbs of digestive biscuits.
2. Oz raisins or sultanas.

Use 1 & 1/2 pkts milk Aldi white chocolate fir the top as this one melts great.

Large Chocolate Biscuit Cake Traybake.
1/2 recipe for a smaller one.
Tin size 9 x 13.
Store in slices in fridge in an airtight container.
Or.
Freeze in slices in air tight containers in freezer.

Ingredients.
10 oz block butter.
One & a 1/2 lb milk chocolate.
1 lb of rich tea biscuit pieces.
4 oz crumbed digestive
1 tin condensed milk.
4 oz mini mallows.
3 tab golden syrup.
Topping.
Melt 1 & half slabs of milk chocolate and spread along top.

Raspberry & White chocolate Cheesecake made so light and fluffy.
Yummy.
Different to the last one i made.
This is truly divine.
So light .❤️ Fluffy too.

Base.
400g digestive crumb.
4 oz melted block butter.

Centre.
4. Oz Icing Sugar.
2 pkts jelly crystals melted in 1/4pint of hot water and left to cool.
150g white chocolate Aldi's is fab.
250 g Mascarpone Cheese.
250/280 ( either will do) Philadelphia full fat cream cheese.
500 mls double cream.

Topping.
Another slab Aldi white chocolate melted first then add 4 lge heaped tablespoons of double cream taken from the
250ml. Extra of double cream for decoration.
Raspberries if liked.
Sprinkles or flake optional.

12 oz castor sugar.
I tab vinegar.
I tab cornflour.

IMP.
ONLY GIVE IT ONE HOUR 15 MIN IN OVEN AT FAN 120°.
140 TOO HOT.
