🍓 Fruit & Cream Cheese Danish 🥐

1 block Simply Better All Butter puff pastry
120g cream cheese, softened
2 tbsp granulated sugar
1/2 tsp vanilla
2 tsp fresh lemon juice
85g fruit jam
Around 80g fresh sliced strawberries
Around 80g fresh raspberries
2 tsp cornflour
1 large egg + 2 tsp milk for egg wash
30g icing sugar
1/2 tsp water
1. Preheat the oven to 200C/180C fan and line a large baking sheet with parchment paper.
2. To make the filling, mix together the cream cheese, sugar, vanilla, and lemon juice until smooth. Start off with a fork to loosen up the mixture then use a whisk or spatula Set aside.
3. In a separate bowl, mix together the jam berries, and cornflour. Set aside.
4. Roll out your pastry into a large rectangular shape Slice the puff pastry in half right down the middle lengthwise using a knife or pizza cutter. Slice each half into 3 rectangles width-wise to make 6 Danish as shown in the video.
5. Transfer to a baking tray and make sure they’re evenly spaced apart. Use a knife to score a border around 1/4 inch around the outside. Don’t cut all the way through, but just enough to leave behind a clear border.
6. Lightly brush the edges with an egg wash of egg and milk with a pastry brush..
7. Scoop 1 tbsp of the cream cheese filling into the centre of each Danish. The filling makes the exact amount for 6. Spread the filling within the border using the back of a spoon.
8. Place the fruit filling on top of the cream cheese. Don’t overcrowd the cream cheese layer, as you should be able to see the cream cheese peeking out under the fruit.
9. Bake 20-25 minutes, until evenly puffed with golden brown edges.
10. 10.Remove from oven and transfer to a cooling rack. They’re best served fresh and warm You can add an extra bit of icing by combining the icing sugar and water to make a glaze to drizzle over.
