Scéal Bakery Handcrafted sourdough breads and pastries. Micro bakery based in Smithfield, Dublin 7. Coming to a market near you Scéal is built on the craft of using our hands.

Our story begins with us meeting on the first day of our BA in Culinary Arts at D.I.T back in 2010; we were placed next to one another alphabetically in our opening kitchen class and haven't left each other sides since. Scéal is a culmination of six years of working as chefs turned bakers - collecting ideas, gathering experience, sharing meals and our true desire to feed people food made with love

and passion. Our bakery is based in Smithfield, Dublin 7, but we began our journey with Scéal in teeny bakery space on an organic farm in Glanevin. We do our utmost to source Irish ingredients where we can, from harvesting produce from the land surrounding us at the farm, to gathering ingredients from our small organic vegetable garden at home. Taking inspiration from the seasons and using what nature makes available to us is an essential principle when developing our new menu items. During the summer months you'll find an emphasis on Irish berries and rhubarb, transitioning to autumn stoned fruits and blackberry picking, and then to apples, quince and pears as we move into those colder winter months. At Scéal we specialise in sourdough bread and laminated pastries, which both take time to make. We bake fresh everyday. All of our products are hand made, using a sourdough culture allowing for a long, slow fermentation process. We start one day, mix and shape the next and bake on the third day. This approach to baking demands commitment of the highest level, where we constantly strive for the best possible bake, refinement and to never expect complacency in our work. It is well worth the wait though, nothing compares to the aroma and that deep crust and custardy crumb of our sourdough or the smell of Irish butter croissants filling the bakery. Scéal x El’s Big Juicy Balls x FORUS Endurance

A bank holiday morning, reimagined.

When El and Si first floated the idea of a joint run club event at Scéal, we couldn’t stop thinking about how to make it work. The vision was clear, bring three local creatives together, to cultivate movement, connection and a slower morning ritual over coffee and pastries.

At the heart of the gathering was a bespoke, once off creation by Shane and El. Our croissant layered with Els signature date and peanut filling and a toasted peanut frangipane. Finished with a brown sugar glaze, peanut date crème and Els signature juicy balls (obviously). Perfect for tearing and sharing with friend and family.

We couldn’t have asked for a better morning. A huge thank you to both communities for filling the bakery with such life this morning.

Let’s do it again soon.

Introducing our blackcurrant and honey twist. This is sitting proudly on our menu as this months seasonal danish. Coming from the mind of Ethan he wanted to play around with the shape of our danish, veering from the traditional squares and circles we are known for. A beautiful vessel for building layers of flavours and textures.

First the pastry is brushed with a tart blackcurrant glaze and filled with a burnt honey sea salt ganache. Jammy blackcurrant compote is next and finished with dehydrated blackcurrant leaf powder. The flavours of a summer time allotment - floral blackcurrants, caramel notes from honey which are undercut by the earthiness of blackcurrant leaf powder.

Here’s to our bakery chief, Matthew, whose final days with us at Scéal are fast approaching.

What began with an off the cuff Instagram message (thank you + Bartine Bakery ) evolved into over 2 and a half years of dedication, relentless care and craft. And let’s be honest, some really hard graft. Matthew took a true leap of faith on Shane and me. He walked into a building site the day of his interview, yet Shane’s vision for what we were creating at Scéal (and perhaps the sheer lunacy of opening a bakery with a newborn) caught Matthew’s heart.

Now, as we enter his final week with us it’s time to say thank you. Matthew has helped shape our dream.
Refining the menu inside and out, cultivated a beautiful team of bakers, pastry chefs and kitchen porters, and dug incredibly deep through every wild season. From navigating our very first Christmas by launching hundreds of dreams with the return of our Christmas puddings, to serving as the powerhouse behind Scéals pizza night menu and not forgetting the queues of the Bambino pop up - he’s been at the centre of it all. In his own words, “anything’s possible when you work for the circus”.

So if you’re in Greystones over the next few days and see this loveable rogue in the bakery please stop to say cheers and thank you as he steps into his next chapter. The Summer Finale: Pizza Night

Our June pizza night was a complete sell-out. It was wonderful to see our pies back in your hands. It truly felt like the perfect summer feast - we even boxed ours up and took them to the park with the kids.

Now, our Pizza Boys - Ethan, Luca, and Matthew - are firing up the ovens for one final night at the bakery. This will be our last run of the summer season, next Thursday, 23rd July

Orders will go live this Thursday morning (16th July). Time slots filled up incredibly fast last time, and with next Thursday set to be beautifully warm, we expect they will go just as quickly. We look forward to sharing one last summer slice with you.

June Bank Holiday Weekend

Whether you’re in the city soaking up the atmosphere of the summer events, or heading for the coast over the long weekend, we’re here for you - open all weekend, 8am–4pm in Dublin 8 and Greystones.

It’s also the final weekend of our May menu, filled with bright early-summer flavours. Think the first Irish strawberries from Knockroe Farm, asparagus and sorrel focaccia slices, and market sourdough made with Irish Ølands wheat.
