Pineapple Ninja Gluten and dairy free cakes As a cake lover, being diagnosed as allergic to gluten and dairy was an absolute no-no! I mean... what? The short answer?

What was I going to make cakes with? Would I ever be able to have scones with my mam again? Would my life now be bland and tasteless? No frickin' way!! The long answer? I put my busy wee ninja mind to work to tease out flour combinations and different ingredients, some call them alternatives, to make cakes that not only taste fantastic for me and others with these intolerances but also that those

without these intolerances would enjoy them, love them and choose them because they think they are as good as or (with a bit of luck...) better than the so-called "regular" cakes. In the making of these cakes, I will always and ever only use gluten free, dairy free and soy free ingredients. I also only use free-range eggs because someone needs to think of the chickens!

Almost a year ago to the very day, I had a leaning tower of sweet potatoes and decided to get caking with them. Now, while the cake itself was fluffy, crumbly and maybe even fudgey (*drool*) and the orange icing was both creamy and zingy (*double drool*), the two weren't exactly hitting it off. Young love, eh? Anyway... once again, I have a litter of sweet potatoes and feel like it may be time for another try with this one. Sure, what else would you be doing on a miserable night like this?! A little look back at yesterday's home-cooked, quick and easy brunch- cinnamon pancakes with, stewed blackberries and blackcurrants, some toasted almonds and a drizzle of honey. With a side of freshly brewed coffee and some very welcome winter sun, this was a lovely belly warmer! Gluten free breakfasts are something that I hear people struggling a lot with. When choosing a cake, people often ask me which is my favourite and it's a bit of a Sophie's choice situation but deep down, I know it's CocoPassion. Every time. Something about the creamy coconut flavour being shattered by the fresh snap of passion fruit gets me every time. Happy Tuesday! So, this morning I decided to try out a vegan pancake recipe (again) and it actually worked! My rushed photo does not do them justice but they were almost entirely eaten when I realised I hadn't taken any pictures so... forgive me on the bad quality please. The texture was fluffy with a nice crispy edge and the flavour was delicate, slightly nutty and improved all the more by the blueberries inside. Seriously. This was one bad-ass pancake mixture! I'll test it a few times more and see if it's a keeper. Watch this space!

It's been a busy week of baking and photo shoots and somehow, it's Friday already and I've not even dropped in to say "hi"! My scones are available to order, and are a handy item to keep in your freezer for a snack or an easy breakfast. Toasted on the grill with a dollop of coconut cream and raspberry jam, they are hard to beat! This cold winter weather always finds me reaching for tropical flavours to inspire warmth, and that's what lead to the creation of these passionfruit and buckwheat pancakes two years ago.
