2 years of Croissantly. 🥐❤️
On August 10th, 2024, Croissantly started with a table, a few pastries and a LOT of questions.
Will people come?
Will they like what we make?
Can we afford the rent?
Can we actually make this work?
We honestly had no idea where this journey would take us.
From that first little table at Bernard Shaw, to Marlay Park, Bushy Park, early mornings, rainy market days, our first sell-out, then another sell-out, and another…
From renting our first private kitchen, to quickly needing a bigger one.
And finally, signing the lease for our own bakery in Dún Laoghaire.
Two years later, we’re here — baking fresh croissants and fresh bread every single day. 🥐🥖
There have been a lot of sleepless nights, mistakes, risks, stress and moments where we questioned everything. But there have also been so many beautiful moments and incredible people along the way.
To every single customer who bought a croissant from us — whether it was from that first table, at one of our markets, or today in our shop — thank you.
To the market organisers and councils who gave us opportunities and supported us when Croissantly was still just getting started — thank you.
To our friends who believed in us, helped us, listened to us complain 😂, encouraged us and supported this crazy journey for the last two years — we love you guys. ❤️
And a HUGE thank you to our current Croissantly team — the people behind the scenes who wake up early, bake, serve, clean, prepare and keep this place running every single day. You guys run the show. ❤️
We started with one table.
Two years later, we have our own bakery.
And somehow… it still feels like we’re only getting started.
