Fluffy Vegan & Gluten-Free Pancakes
Because everyone deserves a dreamy pancake stack
After lots of testing, here’s my gluten-free version of my classic fluffy vegan pancakes — still soft, still airy, still perfect for brunch.
Ingredients:
• 1 cup gluten-free self-raising flour blend (with xanthan gum)
• 1/4 cup almond flour
• 3 tbsp sugar (or maple syrup)
• 2 tsp baking powder
• 1 tsp baking soda
• Pinch of salt
• 1 1/4 cup plant-based milk (soy works beautifully)
• 1 tsp apple cider vinegar (for that fluff!)
• 1 tsp vanilla extract
• 3 tbsp melted neutral oil (sunflower or you can use olive oil if you like)
• 1/3 cup apple purée (baby pouches work great!)
🥣 Instructions:
1. In a bowl, whisk together gluten-free flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, mix plant milk, vinegar, apple purée, and vanilla. Let sit for 5 minutes to activate.
3. Pour wet ingredients into dry and gently combine — don’t overmix. A few lumps are perfect!
4. Let the batter rest for 20 minutes (this helps hydrate the gluten-free flour and improves texture). If you can leave it to rest over night it’s better.
5. Heat a non-stick pan over medium heat and lightly grease.
6. Cook pancakes for 2–3 minutes until bubbles form, flip, then cook another 2 minutes.
🍓 Stack them high with yogurt between layers, drizzle with maple syrup, and top with fresh fruit, toasted almonds, and your favourite nut butter.
