There are two easy ways to get your hands on our treats:

🛒 Order online:

Visit our website at www.sweetalmond.shop, choose your favourite treats or cakes, and at checkout select either delivery (Thursdays and Fridays) or your preferred pick-up location (Saturdays and Sundays)

🌿 Find us at farmers markets

Saturdays: St Anne’s Park (10am–4pm)

Sundays: Herbert Park (11am–4pm)

Fluffy Vegan & Gluten-Free Pancakes

Because everyone deserves a dreamy pancake stack

After lots of testing, here’s my gluten-free version of my classic fluffy vegan pancakes — still soft, still airy, still perfect for brunch.

Ingredients:

• 1 cup gluten-free self-raising flour blend (with xanthan gum)
• 1/4 cup almond flour
• 3 tbsp sugar (or maple syrup)
• 2 tsp baking powder
• 1 tsp baking soda
• Pinch of salt
• 1 1/4 cup plant-based milk (soy works beautifully)
• 1 tsp apple cider vinegar (for that fluff!)
• 1 tsp vanilla extract
• 3 tbsp melted neutral oil (sunflower or you can use olive oil if you like)
• 1/3 cup apple purée (baby pouches work great!)

🥣 Instructions:

1. In a bowl, whisk together gluten-free flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, mix plant milk, vinegar, apple purée, and vanilla. Let sit for 5 minutes to activate.
3. Pour wet ingredients into dry and gently combine — don’t overmix. A few lumps are perfect!
4. Let the batter rest for 20 minutes (this helps hydrate the gluten-free flour and improves texture). If you can leave it to rest over night it’s better.
5. Heat a non-stick pan over medium heat and lightly grease.
6. Cook pancakes for 2–3 minutes until bubbles form, flip, then cook another 2 minutes.

🍓 Stack them high with yogurt between layers, drizzle with maple syrup, and top with fresh fruit, toasted almonds, and your favourite nut butter.

💛 Soft, fluffy, and completely plant-based & gluten-free.

Fluffy Vegan Pancakes

Ingredients:

1 cup flour (all-purpose)
2 tbsp sugar (or maple syrup)
2 tsp baking powder
Pinch of salt
1 cup plant-based milk (I always prefer soy)
1 tsp apple cider vinegar (for fluffiness)
1 tsp vanilla extract
3 tbsp melted vegan butter
1/3 cup Apple Puree (you can use baby pouches of any flavour that you like)

Instructions:

In a bowl, whisk together flour, sugar, baking powder, and salt.

In another bowl, mix plant milk, vinegar, apple sauce and vanilla. Let sit for 5 mins.

Pour wet ingredients into dry and gently combine — don’t overmix!

Heat a non-stick pan over medium heat, lightly grease. Cook pancakes for 2-3 mins until bubbles form, then flip and cook another 2 mins.

Stack, pouring your favourite yogurt in between pancakes, drizzle with maple syrup, and top with fresh fruit, toasted almonds and any nut butter you like (I love almond)
