Happy Sunday everyone. This day next week will be “Mother’s Day “. If anyone would like to celebrate this great family day with some nice sweet treat boxes - traybakes etc or do breakfast with some beautiful homemade breads and scones and even a pan of boxty , I’m available to do all of this for ye. American Ice-cream cake😀 .A Layer of fresh homemade sponge, mint chocolate ice cream with a layer of crushed chocolate chip cookies, a layer of chocolate ganache, vanilla ice cream with a layer of crushed chocolate chip cookies, more sponge and finished off with more ice cream and smothered in chocolate. Something completely different. A new one for me but it went down a real treat served up by the fabulous team at Lough Rynn Castle

Today's creation !! . A cake made especially for the official opening of the new extension to St Mary's National School , Drumlish. The bottom tier is surrounded by pencils cut from icing and the other 2 tiers have a tree and branches with a class subject on the end of each branch. To me the tree signifies growth and maturity in the learning process. Best of luck in your new surroundings to the pupils and staff of this great establishment. 😄😍

Well, well it's time to put up the feet for s few minutes nearing the end of a hectic week. Under pressure but some of us work better under pressure. Everybody up to today has their celebration cake -- mission accomplished . 😄. Just thinking -- would anybody out there like a little pressie of a Christmas cake decorated especially for Santa's arrival. I think we will run a little competition commencing on Monday. All ye will have to do is like and share the post. !!! I'm getting excited -- lets get into the Christmas spirit. 😄😍
