Best of luck to everyone starting junior & leaving cert exams tomorrow.

For coeliacs and those managing food intolerances, exam days can bring an extra layer of stress, especially when it comes to staying properly fed and hydrated throughout long mornings and afternoons.

My advice would be:
• Don’t skip breakfast
• Bring plenty of water
• Pack snacks you know are safe for you
• Try to include slow release foods that will keep your energy steady during the exam

A nice oat bread sandwich, some fruit, flapjacks or a few treats packed the night before can make a big difference on the day.

Most importantly, try to stay calm and look after yourself. You’ve done the hard work already.

I’ve been getting very nostalgic this week & have been looking back through old photographs from the early days of Delicious Bakery!

This one really made me smile.

This photo was taken back in 2007 when I launched our very first product, the Delicious Brownie. Looking at it now, I can’t get over how fresh faced I looked and relatively speaking, it wasn't the worst hair day!

I still remember how proud I was holding that box for the first time. I had put so much thought into the packaging, the recipe, and every little detail, hoping people would love them as much as I did.

Thankfully, they did.

All these years later, our brownies are still our number one best seller! It’s amazing to think that our little brownie has been such a big part of our Delicious story.

My philosophy remains the same, being on a restricted diet should not mean a restricted food experience.

In keeping with our 20th anniversary celebrations, we thought we’d take a little trip down memory lane to where it all began.

Not many people know this, but Delicious Bakery actually started life as a bakery and a gourmet deli 20 years ago.

Looking back at this photo brings back so many memories for me. At the time, I simply wanted to create a welcoming place where you could buy good quality food, with a focus on gluten free products.

The deli was based in Douglas.

Never in my wildest dreams could I have imagined the journey that was ahead.

From those early days to the bakery we are today, it has been an incredible 20 years filled with hard work, laughter, challenges, friendships, and so much support from all of you.

Over the years, we have continued to evolve and grow into a food intolerance specialist bakery. What started with gluten free has expanded to dairy free, wheat free, soya free, and so much more.

Our journey has always evolved to meet the needs of the people we open our doors for every single day, and for that support, we are truly so grateful.

Thank you for being part of our story and our celebrations.

Would you believe it, this week marks 20 years since we started Delicious Bakery?!

When it first dawned on me that we were celebrating our 20th anniversary, it gave me such a feeling of both pride and wonder at where the years have gone!

From those very early days of just having an idea of wanting to take care of coeliacs and working with mum on her wonderful recipes that she developed for dad, to the bakery we are today, I’m so thankful to everyone who has been part of this journey.

From all of us here in Delicious: myself, Derek, mum and dad, family, friends and staff, we send a big thank you from the bottom of our hearts to every single customer who supported us along the way.

We truly do this to make things a little easier for you!

Over the past 20 years we’ve shared so many moments together. It means the world to us that our products have found their way into homes all across Ireland.

Ten years ago, our very first Delicious recipe book found its way into kitchens across Ireland.

Today, Delicious Recipes from My Gluten Free Bakery returns to celebrate its 10th anniversary, filled with the recipes that started our story.

Written by Denise for everyday kitchens and everyday life, this book has become a much loved favourite in homes across Ireland over the past 10 years.

Travelling while coeliac? Here’s my number one tip, and honestly, I only found it out recently. I'm telling everyone, as most people still don’t know about it…

Before you travel, ask your GP for a simple letter confirming that you are coeliac and need to carry your own gluten free food when flying.

Now here’s the important part…

If you contact your airline in advance, many airlines will allow you to bring an additional piece of hand luggage specifically for your gluten free food. And in many cases, it won’t count towards your normal baggage allowance!

Most people have no idea this is even possible.

For us, it has made travelling so much easier and far less stressful. We all know that you end up with a suitcase full of your gluten free essentials.

You can bring safe food for the flight and enough essentials to get you through the first few days of your holiday without worrying about trying to find gluten free options straight away.

A little preparation can make a huge difference.

Less stress at the airport
More peace of mind while travelling
And no risk of being caught hungry or stuck without safe food

Every airline is different, so always contact them directly before travelling, but it’s definitely worth asking.
