Don’t you just love it when a bloke organises the cake… and actually knows exactly what she wants? 🥹

A cowgirl cake for the special woman in his life, and I have to say, this one really lit me up.

I loved bringing in all those little cowgirl details while still keeping the overall look lovely and luxe. A little bit Western, a little bit glam, and definitely not short on personality.

Such a sweet cake to be asked to create, and an absolute pleasure to make. 🤎

There’s just something about a cake with a story behind it that makes it even more special.

Dreaming big. Playing small.

I heard that phrase today and honestly, it stopped me in my tracks.

Because I do dream big.

I have loads of ideas. Things I want to create. Things I want to do. Ways I know I could help people.

And yet sometimes I still catch myself playing small.

And maybe you do too.

Maybe you dream about turning your cakes into an actual business.

Maybe you already have the cake business, but secretly you want it to be so much more than it is right now.

Maybe you want to put your prices up.

Teach classes.

Take on weddings.

Create something online.

Earn an actual income from this thing you’re really bloody good at.

Or maybe there’s something completely different that you’ve quietly been thinking about for years.

But you don’t really tell anyone.

Because saying it out loud somehow feels… embarrassing.

Who am I to think I could do that?

What if people think I have notions?

What if I try and it doesn’t work?

So we make the dream a little smaller.

We tell ourselves we’re being realistic.

We wait until we’re better.
More experienced.
More confident.
More ready.

And sometimes I think that’s the biggest way we sabotage ourselves.

Not by having no ambition.

But by having loads of it and being afraid to back it.

Because here’s the funny thing…

If a friend came to you with that exact same dream, you’d probably be full of encouragement.

You’d see all the reasons she could do it.

You’d remind her how far she’s already come.

You’d tell her to give it a go.

But when it’s our own dream?

That’s a different story.

And sometimes we do need someone else in our corner.

Someone who can see what we’re capable of when we’re too close to see it ourselves.

Someone to ask the questions, challenge the excuses, share what they’ve learned and give us a little push when we start retreating back into the safe option.

That’s a huge part of why I love the mentoring side of what I do and why the Cake School has become about so much more to me than simply teaching cake.

Because sometimes you don’t need another big dream.

You’ve already got that.

So what exactly is Baking Buddies?

I wanted to create something that was about more than just coming along, making something and going home.

Baking Buddies is about the time spent together.

It’s for tots to teens and the grown up they choose to bring along. Mam, Dad, Granny, Grandad, Auntie, Uncle or simply someone special to them.

You don’t need to be good at baking. You don’t need to be creative. And you definitely don’t need to worry about making a mess or getting everything perfect.

We’ll bake. We’ll decorate. We’ll chat. There’ll probably be sprinkles everywhere. And, of course, the kettle will be on. ☕️

Tea, coffee and treats along the way because this is meant to be a little treat for the grown ups too.

I keep Baking Buddies small, with just 7 tables, so they’re relaxed and there’s plenty of time for me to help everyone.

And I’ll keep changing what we make, so each Baking Buddies workshop can be a different little experience.

First up for autumn, we’re making a classic School Cake from scratch and decorating autumn inspired sugar cookies. 🍰🍂

NEW FOR AUTUMN… BAKING BUDDIES!

Grab your favourite little baker, or your favourite grown up, and come spend a cosy afternoon baking together. 🥰

Baking Buddies is something a little different from my usual children’s workshops. This time, the grown ups are getting involved too!

And your Baking Buddy can be anyone.

Mam, Dad, Granny, Grandad, an auntie or uncle, or simply your favourite grown up. 🤍

Together we’ll bake a classic School Cake from scratch, and each child will have their own set of autumn inspired iced biscuits to decorate and take home. 🍂

We’ll stop for a little snack along the way, with tea and coffee for the grown ups, and you’ll take home the School Cake recipe so you can make it together again.

💶 €60 for one adult + one child

Toddlers to teens are welcome, and everything you need is provided.

I genuinely believe there is room for all of us.

Whether someone comes to me for a one to one, joins the Cake School, or simply asks me a question, my aim has never been to teach people how to become another version of me.

It’s to help them become better, more confident versions of themselves as cake makers and business owners.

Yes, I teach the practical stuff. The baking, ganache, buttercream, fondant, structure, decorating and all the little things I’ve learned through years of doing this.

But I also care deeply about the business behind the cakes.

Pricing properly. Being registered and insured. Understanding food safety and allergens. Knowing your costs. Valuing your time. Finding your own style. Building a customer base. And ultimately creating a business that is actually sustainable.

And if that means I’m helping another woman build a successful cake business ten minutes down the road from me?

I’m absolutely okay with that.

Because she isn’t me and I’m not her.

There will be things she does better than me. There will be cakes she loves making that I don’t. We’ll attract different people, develop different styles and build completely different businesses.

And someday I might be fully booked and send a customer her way. I might need to borrow something in an emergency. She might need advice. One of us might get sick. Or sometimes we might just need another person who understands what it’s like to run a business on your own.

I would much rather build relationships than walls.

That philosophy is a huge part of both my one to one training and the Sugarcoated Cake School.

I’m not interested in gatekeeping what I’ve learned.

I’m interested in helping more women build professional cake businesses they can be proud of and creating an industry where we can learn from each other, recommend each other, support each other and still succeed in our own right.

There’s room at the table.

This is me and Lexi with the cake and treats she created today during her one to one buttercream masterclass 💕🍦

Lexi has joined me for workshops and baking events here before, so it was an absolute pleasure to welcome her back for a one to one day and what a natural she is when it comes to cake decorating!

We went for a gorgeous ice cream inspired cake in shades of pink and purple, working with buttercream, ganache crumb coat, a coloured chocolate ganache drip and lots of chocolate decorations. We also practised different piping techniques, including some Lambeth style piping, chatting through the different tips and all those little tricks that help you get the best results from your buttercream.

Lexi was so eager to learn and picked everything up incredibly quickly and just look at the finished cake! 😍

Such a lovely way to spend the day, and I think she did an absolutely fabulous job. 💕

We added an ice cream cone on top, a coloured ganache drip, chocolate bars that Lexi made herself, along with chocolate covered Oreos.

We also practised some buttercream piping on cupcakes and, of course… sprinkles for the win at the end! ✨

Such a fun cake with so many different techniques packed into one design.

And onto cake number two… 💕

This one gave us the perfect chance to practise some Lambeth style piping, working with different piping tips and techniques.

And Lexi just did so well, she really is a natural with a piping bag! ✨

Such a young, fun design and just perfect for this time of year. Her colour choices were gorgeous and just look at the perfection of those drips! 🍦✨

Lexi also went home with a file full of recipes, piping practice sheets, baking information and lots of my tips, tricks and useful resources to keep practising at home.

I have a feeling she’ll be back… and I can’t wait to see what she creates next. Such a lovely girl and an absolute pleasure to teach.

A brilliant day in the studio with Michelle for a one to one buttercream masterclass.

We covered a lot. Recipes, building sturdy cakes, ganache, buttercream, colouring techniques, getting rid of air bubbles, sharp edges and smooth sides, textured scrapers, ombre effects, and quick easy ways to decorate for both kids' cakes and stylish adult ones.

Between us we finished two cakes, a beautiful ombre floral cake and a Spiderman cake that's heading home to Michelle's little man. I'd say he'll be delighted with himself

Here's the thing about my one to one classes. They're built around what you need. And there's no gatekeeping.

You learn the methods I use, the recipes I use, the techniques I use. I'll tell you where to buy supplies, the shortcuts, how to price your work. I hold nothing back, because my business is all about supporting other businesses and helping each other grow.

Michelle is a local woman with a thriving food business already. She runs a coffee trailer and is no stranger to baking, but wanted to build on her cake skills to add a cake range alongside what she does. I can't wait to see her launch it.

One to one masterclasses are available year round and tailored to you.

Ganache is one of those things that can feel far more complicated than it actually is.

Different ratios. Different methods. Different advice depending on where you look. No wonder so many cake makers are nervous of it.

I know I was.

But once I found a method that worked consistently for me, it was a complete game changer.

A strong, stable base. Sharp edges. A cake that’s much easier to cover. And, as you can see here, even when something goes wrong, you can strip it back and start again.

Ganache is now one of those things I wouldn’t want to make cakes without.

And it’s exactly why I teach my method step by step inside the Sugarcoated Cake School.

Because sometimes it’s not that something is difficult. You just need someone to show you a way that actually works.
