We’ve all made cakes where we’ve wrapped texture around the sides, but who knew that simply changing the direction of those texture lines could create such a different impact? I certainly didn’t.

And can we talk about this blue?

I used Colour Mill Navy in my buttercream for this shade and it’s officially my current favourite blue.

Blue is notoriously difficult to get right in buttercream because of the natural yellow undertones. More often than not, you can end up with an unwanted green tinge instead of a true blue.

This one, though… I love.

Although, if you know me, you’ll know that my “favourite colour” has a habit of changing every few weeks!

Sometimes it’s the smallest tweaks that completely transform a cake design. Which do you notice first, the texture or the colour?

Surely it should be illegal for parents to organise a birthday party where the hardest thing they have to do is send me a message with a date. 😂

I take care of the rest.

✔️ And I'll send them home tired, happy and full of pride at what they've created.

The only thing you need to do is enjoy watching them have the best time.

Here's what I've learned....
The stress isn't usually the message itself.
The stress comes from not having already decided where your boundaries are.
When you're trying to make a decision in the moment, everything feels personal. You second guess yourself. You worry about disappointing people. You wonder if you're being difficult.
But when you've already decided
✓ What you will and won't offer
✓ What your food safety standards are
✓ What your lead times are
✓ What exceptions you're prepared to make
Then the answer becomes much easier.
You're not making a decision.
You're simply communicating one you've already made.
This comes up all the time inside Sugarcoated Cake School.
Often, my members already know the answer. They just need reassurance that they're not being awkward, unreasonable or bad at customer service for sticking to their boundaries.
Because having boundaries doesn't make you difficult.
It makes you professional.
Your cake business doesn't have to look like anyone else's.
The goal isn't to build the business that works for me.
It's to build the business that works for you.

There’s something magical about children’s cakes. They have a way of transporting you straight back to your own childhood.

In over 15 years of creating cakes for children, this was my very first Little Red Riding Hood cake. A theme I hadn’t been asked for before, yet one that instantly brought back memories of fairy tales, storybooks, and bedtime stories from years gone by.

This cake was created using a combination of handcrafted edible details and edible images, bringing the story to life in cake form.

It got me thinking… what was your favourite fairy tale growing up?

Were you a Little Red Riding Hood fan? Goldilocks? The Three Little Pigs? Hansel and Gretel?

And if your child has a favourite fairy tale, would you turn it into a cake?

I’d love to hear which story captured your imagination as a child. Perhaps it might even inspire a future cake design.

Most people in your life don’t get it.

They don’t understand why you’re up at midnight pricing a cake order. They don’t understand why you’re turning down work that doesn’t fit. They don’t understand the version of yourself you’re trying to build.

That’s not their fault. But it does mean you have to go and find your people.

I did that. I joined networks, I showed up to events, I put myself in rooms with women who were figuring it out the same way I was. The Mum boss Network Each one gives me something.

And then I thought, what if cake makers had that?

Not generic business advice. A community built around the specific reality of running a cake business in Ireland. Rural towns, small markets, customers you know personally, celebrations that matter to real people.

That’s the Sugarcoated Cake School.

A space where Irish cake makers can grow, ask questions, get honest answers, and have each other’s backs.
