​I’ve been perfecting this new recipe, and it has turned out exactly how I envisioned. It’s a classic French pairing—rich chocolate almond frangipane baked over a bright apricot jam and a flawless, pâte sablée.

Baking tip of the day: Ditch the cake leveler and grab the tin foil. đź’ˇ

​If you’re struggling to get your cake tops nice, flat, and straight without those annoying center bumps, try covering your cake tin tightly with foil before it hits the oven.

​Trapping that steam inside keeps the top of the cake from setting too early, meaning the middle doesn't have to burst through to rise. You’re left with a perfectly level sponge from edge to edge.

​Clean cuts, tight crumb, and zero dome waste. 🎂

Kartoshka is a beloved Eastern European classic with a story stretching back generations.
Originally created as a way to transform leftover cake and biscuits into something special, Kartoshka (meaning "potato" in Russian, named for its shape) became a staple across Russia, Ukraine, Moldova, Romania, and many other countries throughout the region. What began as a humble no-waste dessert evolved into a confection loved for its rich chocolate flavour and endless variations.
Our version stays true to the spirit of the original while adding our own touch: a rich chocolate centre hiding a vibrant sour cherry heart, all wrapped in a crisp chocolate and hazelnut shell.

​Before our signature layered cheesecakes are built, sliced, and glazed, we start at the very beginning.
​📸 Step 1: Baking our own custom biscuits until crisp and deeply golden.
📸 Step 2: Crushing them down to create the ultimate buttery crust foundation.
📸 Step 3: Layering with a rich pistachio and vanilla bean cheesecake mousse and vibrant raspberry insert.
​But this is just the teaser. 🤫
​Right now, they are back in the kitchen getting a complete wardrobe change. We’re giving each slice a brand-new "outfit" for the weekend, and they are going to look completely unrecognizable.
