White Chocolate & Raspberry Blondies. These are absolutely delicious, only problem is, thereโs no one visiting to share them out amongst ๐
The photos below are a good visual step by step guide ๐๐ป
200g white chocolate (I used the bar from Aldi!) Keeping 50g aside to decorate the blondies later.
100g butter
3 medium eggs
175g caster sugar
200g self raising flour
1 tsp baking powder
125g raspberries
Preheat the oven to 180c.
Lightly butter your tin and line with greaseproof paper. I use a tray bake tin I got in Dealz ๐๐ป
In a small bowl, melt together the 150g of the white chocolate and butter until combined. This should only take 40 seconds in the microwave. If the chocolate is not melted after this time, keep stirring, the heat of the butter will melt the chocolate.
In another large bowl, combine the eggs and sugar and whisk until thick and creamy.
Once the chocolate and butter mixture has cooled slightly, fold it gently into the sugar and egg mix, a little at a time, until all combined.
Sieve together the flour and baking powder and again, fold it gently into the wet ingrediants. *My old Home Ec teachers wouldnโt be impressed but I used a wooden spoon to fold, it is recommended to use a large silver spoon, as it keeps the mix cool.
Once all combined, put the mix into your prepared tin and smooth with the back of a spoon.
Scatter the raspberries on top of the mix and pop into the oven for 30-35 mins. Keep an eye on then after 25 minutes. Because of the high chocolate content, they do brown on top quite quickly.
After this time, insert a sharp knife or a skewer into the middle of the bake, on removing, theyโre will be moist crumbs on the knife, thatโs how you know theyโre done ๐๐ป
Allow them to cool in the tray.
Once cooled, remove from the tin while still on the greaseproof paper.
Melt the remaining 50g of white chocolate, and drizzle on top of the blondies.
Once the chocolate has set, cut into 12 squares!
