Springtime tonic.
It seems like everyone I know is struggling with lingering sickness at the moment. So I decided to brew up a herbal tonic. It's got a bit of everything that's lush in my garden at the moment and a couple of dried bits too :)













I bring it to the boil and leave the herbs in to infuse. Mix with honey to taste and a little alcohol to make it last a bit longer.

To drink wither take it by the shot, mix it with herbal tea or with juice and Fizzy water.

These are destined for a face balm, but I love them in tea too :) and I can definately feel a spring coming on.

Mead can be bottled young so it's still slightly sweet or left to age.

It's with a heavy heart that we announce that we are closing the Fermentary in Borris. Unfortunately due to factors outside our control we are unable to keep trading.

Thanks to our staff, without you we couldn't have done it :) you were always a pleasure to work with and kept us going through the rough and the smooth, always prepared to give that little bit extra.

Thanks to our suppliers, you're products helped us create something truly unique in Borris.

Thanks to our customers near and wide. Without you we never could have brought our little dream to reality. Whether it was a glass of booch, amazake granola or fermented hot sauce it meant so much to us that you really liked what we are so passionate about.

Although our story at the Fermentary in Borris is concluded it's far from over. Fermentation is our passion and we will continue practising, learning and growing.

Handcrafted vinegars are a great source of live bacteria and yeasts. They're also a great way of having a taste of the summer all year round.
It's really interesting to create hyper local flavours depending on what grows near you ❤️

This one is created by making a 'wine' first and then turning that to vinegar, but it's also really easy to infuse vinegars.

For this vinegar we will brew the wine for about 2 months, then another couple of weeks for the vinegar and we might even infuse elderberries in it then to get a double elderberry experience! 😁
