Founded in 1987, the Yuen Tung Sugar Factory has been crafting traditional sugar products for more than 30 years. The “Ship Brand” is one of the leading confectionery companies in Hong Kong, where almost every family has crystal rock sugar, slab sugar or brown sugar in their pantry. Yuen Tung Sugar Factory (YTS) was also the winning company of the 2020 Hong Kong Top Brand Awards organized by the Hong Kong Brand Development Council and the Chinese Manufacturers’ Association of Hong Kong.

Raw cane sugar, tipped onto a plate before it disappears into a recipe. The grains are coarser than supermarket sugar and they carry a faint molasses smell straight out of the bag. My grandmother kept a tin of it for steamed sponge cake. I still judge every batch against the memory of her kitchen.

Brown sugar boba syrup the slow way. Equal parts Ship Brand black sugar and water in a small pot. Low heat, 10 minutes, stir until it coats the back of a spoon. Pour over pearls, top with cold milk. The caramel depth is what you cannot get from store-bought syrup.

慢火煮黑糖珍珠糖漿。帆船牌黑糖和水各一份，小鍋低火煮十分鐘，攪到能掛在湯匙背面為止。倒在煮好的珍珠上，加冷牛奶。市售糖漿煮不出這種焦糖香。
