I am really putting down the whisk this time… 🥹🫶

Saying a final goodbye to all of you from Bien Caramélisé as I venture into new projects. It's been a joy to have been able to extend my time baking for everybody in these recent months — huge gratitude to my friend .hk for opening up her space for me ❣

Our once a year offering of fluffy, rich hot cross buns filled with housemade candied orange, rum & orange juice soaked raisins, as well as premium couverture chocolate 🍊🍇🍫

This year enjoy it with a delicious, 100% clean label soy milk butter (best vegan butter I’ve tried thus far 🧈)

Also back is our XL Ferrero for those who missed it for LNY (or want a top up😉) as well as a selection of sourdough ciabattas and shio pans!

Our design features a piñata, a symbol of shared joy with a story that spans continents. Legend has it that its earliest inspiration came from ancient China, where people would break clay pots during New Year celebrations to summon good fortune for the seasons ahead. We love this idea of shared luck, which is why we chose it for our box—a plant-based gourmet selection made to be opened and enjoyed by all, sharing both fortune and sweetness. 🍬🍪

A more in depth look into our mooncake collection this year (Slide to see all the flavours 🥮)

Each component of every mooncake is made in small batches and hand-crafted from scratch:

🌱From hand picking lotus seed hearts out one by one (even missing one means the final lotus seed paste will be bitter);
🍐To slicing local young ginger roots into perfect thickness for slow poaching in rock sugar and maple syrup until tender but still retaining its spicy kick;
🍋To zesting and removing the bitter pith of each citrus fruits before cooking the marmalade then patiently allow time to do its magic.

But it doesn't stop there: Besides using only 100% premium plant-based ingredients, we also fine tuned our recipes to contain less oil and sugar than traditional counterparts, as well as utilising natural sweeteners such as Trehalose to lower the sweetness even further, and allow natural flavours to shine.

It’s labour of love — but we wouldn’t have it any other way 💛

We truly hope you taste the care in every bite.
