最近試一種新麵粉，是來自英國Wessex Mill的雜“麥”麵粉，包含小麥、大麥、黑麥、麥芽，並添加了加入罌粟籽和、芝麻。這種麵粉採用傳統方法配合和機器磨製。

焗出來的酸種麵包不僅除了有一般酸種的獨特風味，還更有強烈的麥香味，剛出爐時，整個烘培室充滿了像就好似一间穀物磨坊一樣的香氣。

Recently, we use a new Mixed Grain Flour from Wessex Mill in UK, which includes wheat, barley, rye, malt, and also contains poppy seeds and sesames. It is produced using traditional methods and machines.

The sourdough bread made with this flour not only has the unique flavor like other sourdough breads, but also has a strong wheat aroma. When it comes out of the oven, the entire baking room is filled with a fragrance reminiscent of a grain mill.
