A Financier is a small French almond cake originated from Paris, the Financier was also called "banker's cake" and it is originally prepared in a mold which resembled a bar of gold.
A Canelé is a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust.
Combined with optimal baking is how we make the great French pastries.
