Edible Spring Garden🌸

Ingredients:
- 250g hummus (as a base, possibly more to help hold the toppings)
- 2–3 tbsp Green Olive Paste
- Cucumbers: cut into sticks of different sizes or halved
- Fresh seasonal vegetables (such as carrots, cherry tomatoes, cucumbers, radishes, and celery leaves), cut into different shapes and sizes.
- Extra Virgin Olive Oil for drizzling

Instructions:
- Spread the hummus as a base on a serving plate.
- Add the green olive paste and gently spread it over the hummus.
- Arrange the vegetables on top, creating a colorful palette.
- Drizzle with Extra Virgin Olive Oil before serving.

Avocado Chocolate Mousse with Extra Virgin Olive Oil🥑

For the mousse:
- 2 large, ripe avocados
- 2 heaped tbsp unsweetened cocoa powder
- 2–3 tbsp agave syrup (adjust depending on desired sweetness)
- 1 tsp vanilla extract
- 2–3 tbsp Extra Virgin Olive Oil, plus extra for serving

For serving:
- Flaky sea salt
- Pistachios or hazelnuts, roughly chopped

Instructions:
- Blend all the ingredients together in a food processor until smooth and creamy.
- Serve the mousse αnd drizzle with Extra Virgin Olive Oil and finish with flaky sea salt and chopped nuts.
