In collaboration with the Cafe Archaeological Museum Chania, we created an evening gastronomy tour through the heart of Chania, ending with a beautiful sunset dinner overlooking the city and the sea.

“Kourabiedes” are a type of cookie that we make at Christmas. Their secret lies in the aromatic butter and the toasted almonds, which we chop by hand. Thank you Eleni Palada for the amazing recipe!

Ingredients you will need:
• 500 g cow’s butter
• 500 g goat and sheep butter
• 150 g powdered sugar
• 500 g almonds, hand-chopped and toasted at 170°C until golden
• 1 whole egg and 1 egg yolk
• 2 sachets vanilla sugar
• 1 shot glass of flower blossom water
• 1,500–1,800 g all-purpose flour
• 2 sachets baking powder
Method:Beat the butter with the sugar until light and pale. Add the flower blossom water and the vanilla. Transfer the mixture to a large bowl and add the flour. Knead the dough, shape the cookies, place them on a baking tray lined with parchment paper, and bake at 170°C (fan oven) until golden. Once cooled, lightly spray them with flower blossom water and dust generously with powdered sugar.
