to 4 months ago: we had the august opportunity to be a part of the 8th edition of the by Citi TV & Citi 97.3 FM. The over 150 participants got to snack on our yummy cake slices during the trip, while touring Ghana ๐ฌ๐ญ in a unique fashion. So the order was for 200 cake slices and due for delivery on the morning of Saturday March 4, by 6am. Considering the amount of work, time and ingredients required, I calculated and planned for all the mixing, baking, cooking, slicing and packaging involved. The Thursday prior, I had returned home at around 10pm from a long day but for some reason, I had this strong urge to begin work. Even though I was worn out, I was instantly overcome with a sense of energy I couldnโt fathom so I decided to yield to the prompting. I began with the banana and mango loaf cakes and went to bed. I woke up on Friday morning poised to begin a 14-hour bake-a-thon to finish up, but ECG had other plans. ๐ I reached for the light switch when I got the kitchen and your guess is as good as mine; there was no light. Ei! ๐๐พโโ๏ธ But yโall know that God is faithful, right? So with confidence, I looked up at the unlit bulb, grinned and shook my head.

Hereโs how God worked it all out, PERFECTLY. When I began baking almost 3 years ago, I had no fancy equipment so I taught myself to mix cakes just right, using nothing but my eyes and muscle strength๐ช๐พ. Also, most of the cake recipes I use donโt require electricity but 2 out of the 3 that required it, I had baked the night before. Now, about 2 hours after I got to the kitchen, the lights came on, but little did I know that this joy would be short-lived. As you can imagine, I heaved a sigh of relief and immediately put my mixer to work on the 3rd batch of cakes that required electricity, the vanilla loaf cakes. Would believe that as soon as I had creamed together the butter, sugar, and eggs, the lights went out?! Hhmmmโฆ and that was how I realised that it was Godโs promptings that had led me to begin work the night before! I finished off the vanilla cake batter by hand and then got to work on the chocolate and red velvet loaf cakes, also by hand.

After all 15 loaf cakes had baked and cooled, cutting and packaging was the final leg of this operation. By this time, I had been on my feet for a good 10 hours and was still working in darkness. I bless God for my mother because her involvement at this point was invaluable. For about 4-5 hours, we sat around a table slicing the loaves in batches, individually placing each slice into a cellophane bag and labelling each bag with the appropriate stickers. After packing it all up in ready-to-go style, it was around 2am. I got barely 2 hours of sleep and then I had to get ready to set off for Tesano with delight in my fatigued eyes. The order was delivered without a hitch, even though I was left utterly drained. ๐
