MILO ICE CREAM RECIPE
Ingredients
1. 500 g Whipping Cream or Heavy Cream
2. 250 g sweetened condensed milk
3. 1 teaspoon vanilla extract (or any flavour of your choice)
4.1 cup of milo powder
5.Note: Since you are using Sweetened Condensed milk, you don't need to add sugar, but if you are using fresh milk, then you should add some sugar and egg yolk)
Preparation
1. Pour the cold Whipping cream into a bowl and whip for about 3 minutes using an electric mix on high speed. Beat until it becomes stiff.
2. Add your milo,salt and the condensed milk and vanilla flavour.
3. Mix properly the whipping cream and condensed milk-vanilla extract mix in a bowl.
4. Pour into an airtight container, cover it and store in a freezer overnight or for some hours

HOW TO PREPARE ZOBO DRINK.

Zobo drink is a veritable source of vitamin A. Health researchers recently confirmed that it cures diarrhoea and pneumonia. According to them, it is also good for a hypertensive patient.

INGREDIENTS
- Dried Zobo leaves
- Ginger (grounded) or diced fresh one
- cloves
- Lime or lemon juice (optional)
- Pineapple
- Sugar or Sweeteners
- Flavours (Any..Strawberry, apple, pineapple e.t.c)

PROCEDURES
1. Wash the zobo leaves properly with an ordinary water to get rid of sand.

2. Put the washed zobo leaves in a cooking pot. Add moderate amount of water and allow to boil for about 30 minutes.

3. Add the grounded ginger or dice ginger and cloves, the pineapple including peels and the lime or lemon rinds and allow to boil for about 25 more minutes.

4. Remove from heat, allow it to cool and sieve into a big bowl to remove residue.

5. Remember to add sugar or any other sweetener when it is still hot and stir properly to taste.

6. At this point, add any flavours of your choice. Any other baking flavour can also be used.

7. Pour into bottles or cans and chill immediately to prevent fermentation.

How to Make Chicken Sharwarma

DESCRIPTION
The best thing about anything homemade is that you can prepare it exactly how you like it, no one will know your taste buds or palette better than you, so a homemade meal or snack is always a good idea. You could go to your favorite shawarma joint, but still feel like it’s missing something or an ingredient is too much and overwhelming, let’s face it, it’s not every time our favorite joints get it exactly how we want it.

I decided to share this recipe, first, because I love it so much and second, because sometimes I know you just want to whip up something quick and on the go when you can’t be bothered to actually make rice, Stew, Amala, Soups and the likes , so this is perfect for those moments.

This recipe is a really simple one yet so good! And it can be flexible too. You don’t have to use the exact same ingredients I used, you can add what you want and exclude what you don’t want in it, you can add sausages, use turkey steaks, use beef instead or even mix them all together, it’s your preference really.

I hope you try it out and enjoy this yummy goodness as I did, your taste buds will thank you!

INGREDIENTS
* 300g Chicken Strips
* 2 Flat Bread
* 1 1/2 Cabbage (Shredded)
* 3 Tbsp Ketchup
* 5 Tbsp BBQ Sauce
* 3 Tbsp Mayonnaise
* 1/4 Tsp Dried Thyme
* 1/2 Tsp Curry Powder
* 1/2 Tsp Garlic Powder
* 1/4 Tsp White Pepper
* Cooking Spray
* 1 Stock Cube
* 1/4 Tsp Salt

PREPARATION METHOD
Step1. In a bowl, season the chicken strips with some salt, stock cubes, garlic powder, white pepper, a little dried thyme and some curry powder. Massage the seasoning into the chicken then leave to marinate for 20-30 minutes before grilling...

Step 2. Put a grill pan on fire on medium to low heat, spray in cooking oil, then place your seasoned chicken strips one after the other and allow to cook on each side till properly done.

Step 3. On a chopping board, chop up the chicken strips into small pieces, then set aside...

Step 4. To make the sauce for the shawarma, mix together the Barbecue sauce, some ketchup and mayonnaise and set aside.

Step 5. Take your Flat Bread and split it in two, examine both pieces, the piece with more holes or tears should be at the top, then the better piece on the bottom.

Step 6. Start by laying the sauce onto the flat Bread, then spread the Cabbage in, Then some chicken, then add a little more Ketchup, (avoid putting too much ingredients inside, otherwise it becomes difficult to wrap), secure all the fillings in the middle of the flat bread, so that it is less messy.

Step 7. To wrap the actual Shawarma, use the first piece for the initial wrapping then finish off with second piece of flat bread then fold on both ends. Continue the process till you run out of ingredients. ( To have a clear understanding of HOW TO WRAP THE SHAWARMA, see the video below).

Step 8. Place your shawarma on the grill pan for 5 minutes, and your shawarma is ready.

Red Velvet Cake
Ingredients

Makes about 10-12 servings
Cake Batter
2 2/3 cups (310g) cake flour
2 tbsp (16g) unsweetened cocoa powder
1 tsp (5g) baking soda
1 tsp (5g) salt
1/2 cup (113g) unsalted butter, room temperature
1 1/2 cup (300g) sugar
2 eggs
1 cup (220g) vegetable oil
1 tsp (5ml) white vinegar
2 tsp (10g) vanilla extract
1 cup (240g) buttermilk, room temperature
1- 2 oz (30g) red food coloring gel

Cream Cheese Frosting
17 oz (500g) cream cheese, room temperature
1 1/3 cup (300g) heavy whipping cream, chilled
1 tsp (5g) vanilla extract
1 1/4 cup (156g) powdered sugar

1. Preheat oven to 350F (180C). Grease with butter and dust with flour two 9 inch (23 cm) round cake pans.
2. In a large bowl sift together the flour, cocoa powder, baking soda and salt and whisk to combine.
3. In another bowl mix butter with sugar until combined. Incorporate eggs one at a time. Mix in oil, vinegar,vanilla extract and buttermilk. Incorporate flour mixture until well combined.
4. Gradually add red food coloring until the desired color is reached.
5. Pour the batter evenly into the prepared pans.
6. Bake for about 30 minutes until a toothpick comes out clean

SAMOSA RECIPE:
For the dough:

120g plain flour
3 tablespoons of vegetable oil or melted margarine
A pinch of salt
1/4 cup Warm water
Vegetable oil for deep-frying

Preparation:
Combine all the ingredient together to form a dough
Roll out dough, then cut out a circle shape using a circular cutter
OR
You can just use the same ingredient and method that you use for making springroll wrapper for samosa wrapper also
Steps For the wrapper:

Repeat the same process as for Springroll but this time around it should be long and straight. The only difference between Spring roll and Samosa wrappers is that, Spring roll wrappers are oval in shape and wider while Samosa wrappers are long and slimmer. Spread flour on a tray and place to avoid stickiness.

FOR THE FILLING:

Before you start making the filling, chop all the vegetables and mince the garlic, ginger and beef.

Heat up 1 tablespoon of vegetable oil and add minced garlic and ginger, fry for some seconds

Add minced beef and onions, fry lightly until golden brown, then add the red hot pepper, curry and thyme and stir.

Add chopped carrots and stir fry for 2 minutes, add red hot pepper then add red and green pepper

Add Maggi cubes, stir then set aside
Note:you can also use chicken or only vegetable instead of meat

FOLDING THE SAMOSA

Whisk one egg
Lay the Samosa wrapper on a tray, fold the edge from your right hand side almost to the middle forming a triangular shape

Hold the upper edge by your right hand side and fold to the other side opposite you and add the filling to the pocket formed from folding

Egg brush the part of the wrapper remaining and bind it behind
Heat up vegetable oil and fry the Samosas .

Note:if you do not want to fry all the Samosa and Springrolls, sprinkle flour in a plastic container and place them inside, store in the fridge, You can also store the wrappers by spraying them with oil then place in a kitchen towel and refrigerate.

Homemade bread recipe
Ingredients
1 500g flour
2 30g butter
3 20g sugar
4 10g yeast
5 5g salt
6 nutmeg(optional) or any other flavors of your choice
7 warm water
8 egg
Procedures
Mix the yeast, milk,sugar nutmeg,egg,salt,butter in warm water together
Add the flour nd mix together
If sticky add some flour
If hard add some water
Knead till soft and when u insert your finger it can come out clean nd no trace of the dough
Cover in a bowl nd leave to rise for 30 minutes
Bring it out of the bowl and knead
Then put it in the bread pan and leave to rise for 1 hour
Bake in temperature of 190 degree for 20- 30 minutes.
Your bread is ready

OGBONO SOUP RECIPE
Ingredients:
Assorted meat and fish: goat meat, kpomo, stock fish, and dried fish
Ogbono seeds
Palm oil
Ground crayfish
Medium onion, sliced
Seasoning cubes (Maggi/Knorr)
Ugu (pumpkin) leaves. Alternative you can use spinach or bitterleaf
Salt and pepper to taste (hot pepper)

Tip: Ogbono soup should be thickish and draws, hence try not to cook ogbono soup with too much water – usually the little stock/water from cooked meat.

Preparation Method:
Get the major ingredients ready. Grind the Ogbono seeds with a dry mill. Pick and cut the pumpkin leaves, and set aside. Defrost chopped spinach if that is what you are using. Grind crayfish and pepper, and set aside.

Wash and clean the meat thoroughly. Cook with sliced onions and seasoning cubes to taste. Cook on low heat – cover pot and allow to it simmer for about 30 minutes. This allows the meat to cook tender and soft, but also helps to release its natural juices.

After 20 minutes, add the stock fish and dried fish. Add the hot pepper and ground crayfish, and continue to cook for the next 10 minutes. Add palm oil, cook for another 5 minutes to allow the palm oil melt and combine well with cooking contents.

Put heat to very low and stir-in ogbono gradually, stir continuously – this allows ogbono to dissolve nicely, and eliminates forming lumps. You will notice the Ogbono start to thicken and draw – keep stirring till the ogbono has completely absorbed the meat stock.
Combine thoroughly and leave to cook for about 15 minutes on medium heat.

Taste for seasoning, salt and pepper – adjust if necessary. Stir occasionally, scraping the ogbono that sticks to the base of the pot.

Finally, add the pumpkin leaves (or any of the alternative leaves you using). Stir very well, turn the heat low and allow to cook for about 5 minutes.

Best served with pounded yam or garri (eba). OR serve with your favourite kind of fufu (swallow).

PROCEDURE:
-Mix water and yeast and wait for 10 minutes for yeast to be active
-Add all ingredients to the yeast mixture including some amount of groundnut oil apart from the salt
-Mix properly and lastly add the salt...
-Transfer to a clean surface sprinkled with some dry flour and knead
-While kneading add bit by bit of flour till you get a soft,smooth and elastic dough
-Put into a bowl well greased(then cover with a clean kitchen towel)and allow to rest for 1 hour to rise
-After 1 hour bring out to a clean surface sprinkled with flour and knead again to let out air
- cut into balls and cover to proof for about 15minutes
- After 15minutes knead one by one and create your desirable shape and cover to proof for another 15 minutes
- Fry on low flame with groundnut oil

MY MEAT PIE RECIPE
Dough
Flour 500g
Butter 250g
Cold water for mixing
Baking powder 1/2tsp

Fillings
Irish potatoes 5pcs
Carrot 4pcs
Minced meat 500g
Spring onions
Curry
Thyme
Salt
Seasoning
Little ground pepper (optional)
Oil 1 tablespoon for frying.
Steps:
Put your flour in a bowl,add your baking powder and butter,mix till it looks like bread crumbs.
Add your cold water little at a time till it becomes a dough.
Peel and wash your veggies, dice to cubes.
Cook your minced meat with your spices and salt and little spring onions.
When it's well cooked,sieve the stock and set aside,use the stock to cook your carrots & potatoes,when it's almost time to remove from fire,add your diced spring onions to it and let it cook for a while.
Put your sauce pan on the fire and put the oil into it,then pour your minced meat in it,fry a bit, then turn your cooked veggie into it let it cook together,make sure it's somewhat "watery",get 3 TBS of flour and dissolve in little water,pour it into the mixture and cook for a while till it's thickened.
Spread on a tray to cool off.
Use a meat pie cutter to cut,or a round bowl to cut out and press with fork.
Egg wash the pies.
Remember you roll it flat,but not thin.
Place on a foil tray and bake in a moderately hot oven for 35 to 40 mins.
