❗️Getting prepped for the week ahead.

Happy Easter everyone! We had a delicious roast lamb dinner cooked by my hubby (except the gravy - always my domain 😜!) and now I’m making the most of the leftovers and getting prepped for the week ahead so I thought I’d share my plan for it with you…

I’m going to make a stock in my slow cooker overnight (lots of hints and tips from my good friend for her bone broth, look it up on her wall!) with the bone and then use it with the leftover meat to make a lamb and chickpea curry later in the week, packed with veggies (tinned tomatoes, sweet potatoes, the leftover carrots from the roast, spinach…). It will be made up as I go along so I will be winging it based on what I’ve got that needs using up. It usually turns out fine 🤷🏻‍♀️😂.

⭐️ Top tip - I always find it much easier to strip the meat off the bones while it’s still warm and then I chop it all up ready for using in the next meal.

There are some things in life that it seems we just can’t give up 🤷🏻‍♀️. 🐰

Yesterday, while my husband and I were working, our 12 year old son made Pasta Putanesca for dinner for the whole family. It was absolutely delicious and such a treat to come home and not have to race to get dinner on the table! No images of him making it unfortunately because I wasn’t there! Thank you Sam 💙💙

🌱My seedlings are really coming on now! These are aubergine plants and pepper plants and I have tomatoes on the go too so far. I can’t wait to be picking my own veggies in the summer!

This was my secret (because of the inappropriate language!) Mother’s Day card from my eldest and she’s spot on 🙊😂! From the get go our children have always eaten the same food as us, we don’t give options and make different meals for people but we do respect that we all have the odd thing we genuinely don’t like, adults and kids alike.

Happy Mother’s Day to all of the mums doing their best out there 💞, because our best is all we can do. ###

Happy St David’s Day! We made our Welsh cakes last night so that the kids could have them in their lunch boxes today, and just like I remember as a kid, I couldn’t get them off the bakestone fast enough 😍 🏴󠁧󠁢󠁷󠁬󠁳󠁿

Tonight’s dinner was a relatively quick, healthy and cost effective spicy fish stew, wholly reliant on store cupboard and freezer ingredients and which can easily be switched up with whatever you have to hand. I totally winged it with this recipe and the whole house loved it. Comment if you’d like me to DM you the recipe so that you can give it a go! X

Happy pancake day!! I LOVE pancake day, I always have and tonight we had a pancake feast, savoury for main and classic lemon and sugar for dessert! We often have American style (thick) sourdough pancakes on the weekend for breakfast but for me, Shrove Tuesday pancakes are always super thin like crepes, maybe just because that’s how my mum always did them.

Swipe to see more pics but it was mostly a cost effective combination of things I had that needed using up (which is exactly what Shrove Tuesday is meant to be right?!) and weren’t enough to make a meal on their own, so here’s what we had…

* Mushroom & spinach with shallots and garlic (fried in the same pan that I made the pancakes in while they were keeping warm in the oven)

* Salmon and prawn in Emmental cheese sauce with chives and peas

* Bacon, wilted spinach and cheddar (prepped in the same pan after the mushroom dish… because I don’t have endless pans and hate a washing up mountain!)

We served it with a simple leafy salad and a sprinkling of milled seeds and I also added some turmeric into the pancake batter for an extra boost that the kids wouldn’t notice - a great tip from the amazing .

If you’d like any more specifics on how I made anything please message me.

Be forewarned, I did spend about 2 and a half hours cooking all of this, pancakes are a bit like Welsh cakes - not necessarily difficult but you have to stand at the hob making them for ages… which reminds me why we don’t have them more often 😬

Hello! My lovely customers and supporters, you may have noticed that my social media has been very quiet over the last year. Whilst I have continued baking for many of you, 2022 was a difficult year with lots of change.

I started Mrs O’s so that people could enjoy exceptional homemade cake (with no added nasties) at home with a cuppa, just how I had been brought up. For many reasons, including increases in the cost of food and energy, I have decided to step away from professional home baking.

However, I hope you will continue to follow this page as I plan to document the food that I make for myself and my family and hopefully inspire you to cook effortlessly from scratch.

Many of you have often asked me why I’m not overweight with so much cake around me - hopefully this will show you! I am passionate about everything in moderation, eating a balanced diet that is healthy, nutritious and cost effective, avoiding food waste to help the bank balance and the environment.

This balanced and moderate approach to shopping, cooking and eating works really well for me and my family and I really want to share this approach with you, so I hope you will stick with me on this next stage of the adventure.

For those who are still reading this, I have one last treat for you! I will be making a limited number of brownies, jars of salted caramel and carrot cake loaves for Valentine’s Day as a thank you for your very loyal years of support. Please email me to enquire and order. X
