The era’s of all the production units…the long, eventful and crippling road to a 20ft x 8ft shipping container.
Whilst baking down at the legendary Haxby Bakehouse I would fill my free time making more bread in the shape of BAGELS from home like the glutenous psycho I am often bouncing ideas off my very supportive housemate . I was then gently nudged into doing a Sunday market down at the Shambles Market. ‘Nothing to lose…’ and ‘why not…’ were common phrases thrown about.
I then sheepishly asked if I could sneak in on Saturdays and Sundays to make and bake some bagels to which he very kindly agreed on the terms that a few bagels would be ‘accidentally’ left behind. The one true form of baker negotiations.
After a brief stint at my good friend , Abbie, Frank & Brian’s house. I moved to a garage off the A64 which was short but enjoyable all the same but a cost I couldn’t afford at the time.
Next up, I moved into my own place which so happened to have a garage. Gave it a thorough sweep and moved the operations back home where I started to ramp up wholesale and confuse my neighbours as to why there were lights and steam excreting from said garage at such an early hour. This lasted all of a year and then some big hitters came calling.
one of my wholesalers at the time offered me up a space in an underground bunker of a kitchen in return for a healthy supply of bagels to which I agreed and to whom I’m very grateful for offering up.
Almost done folks last few stops. came calling and offered me up a gem of a location right in the heart of the city to which I gratefully took them up on and what a stop it was, meeting some real legends of hospitality and colluding on ideas.
Finally, the shipping container was born. Thank you to for welcoming me into the fam. A lot of thanks to the bakers who have dropped in for a rogue shift. The people who have let me into their spaces. I’m missing a few people/steps here I’m on a word limit…
