ar, chocolate and coffee. Everything is freshly made to order in small batches and is available from selected cafés in Lincoln, including Stokes, Portico and Lincoln Cathedral Coffee Shop. They can also be ordered direct from me to enjoy at home. Why gluten-free? I started Happy Pug Bakes in 2011 because I was really fed up with going to local cafes and finding no homemade gluten-free treats on the menu. Most cafés didn’t seem to want to know what gluten-free even meant. Some cafes did have one or two gluten-free things but it was the same things every time I went. I always felt so disappointed, and I thought there must be lots of other people who felt the same because more and more people are developing gluten or wheat intolerance. I began experimenting with basic sponges, pastries and shortbreads and tried them out on friends and family. Everyone said the bakes tasted just as good if not better than those made with wheat flour. The main difference that people commented on was the texture. My bakes are lighter than wheat-based ones and lots of people preferred that because they could eat them without feeling too full. Happy Pug Bakes are not just for those with gluten intolerances - they can be enjoyed by anyone who appreciates quality home baking. To me, sitting down for a cuppa and a cake is one of life’s simple pleasures. I love baking and decorating my cakes and it makes me happy to know that people enjoy eating them. Why the Happy Pug? I love pugs – I have three of them – and I love cakes. I wanted a name that was cute and catchy with a happy feel to it. Like foodies, pugs are never happier than when they’re eating. And pugs - like cakes - make people smile.
