I really appreciate you following my journey to perfect gluten free cakes (and savouries particularly pastry) to taste amazing - like even better than normal great cake!

What a day - big car went in garage as things starting to make noises 🙈 so had to follow OH to garage to bring him back - Gluten Free Wedding Cake on Saturday - postal box some cake off to lovely Gran down south so she can celebrate live on line with cake ( Gf and same flavour obviously!) - , made GF quiches , decorated cupcakes, then GF deliveries ( in tiny car) around Teesside - then bought supplies / shopping, back home picked up OH back to garage to pick car up - home then on to the wedding cake and a big GF 10” square birthday cake covered in fondant for a customer to decorate ( yes we do this too !) - roll on the weekend ( going in a retreat but more about that later ) -😉

It’s rather large! All of 14” lemon - just 1 of 3 going in oven - never seen such a big cake! Customer wanted 16” but I wouldn’t get that in my oven! Also had to rethink turning it out on a cooling rack as I didn’t have one wide enough - it’s logistics like that that’s the unseen in baking ! Heyho the joys !
