Feeling very loving and generous to you today so here’s a tip!
If you can’t get hold of eggs but you want to bake, alternatives are:

1tsp Bicarbonate of Soda and 1tsp Cider or White Wine Vinegar per egg

Or

Mix 1 tsp of chia or ground flaxseeds with 3tbsp water or milk per egg. Set this aside for 10 minutes to gel before using.

Bonus eh?

Felt like sharing the love... so here’s a lovely, easy recipe for you to try at home! Gluten & Dairy Free too!

Peanut Butter Cookies

250g Crunchy Peanut Butter
200g Light Brown Soft Sugar
1 Medium Egg

Preheat the oven to 180c/160c Fan/ Gas Mark 4. Line two baking sheets with baking parchment. Beat all the ingredients together in a medium bowl until combined. Scoop out tablespoons of the mix and roll into balls - should make about 18. Arrange the balls on the baking sheets, spacing apart. Press down with the back of a fork to flatten slightly. bake for 12 minutes. Cool on the baking sheet for 5 mins then transfer to a wire rack to cool completely. Can be stored (hah!) in an airtight container at room temperature for up to 3 days (yeah right!!!)

Today I had the great joy of making some of my pretty cupcakes.... domed ones with lots of detail and decoration on them. I will post a picture tomorrow, once they have been collected!
