I started following a strict/clean keto way of eating during the first lock down as I was increasingly concerned about my health. Having an autoimmune disease (Systemic Lupus) and Fibromyalgia, I researched and discovered that following keto would help with inflammatory conditions and I might even lose some weight too! , I actually lost 5 stones in 7 months and can't tell you how much better I felt for it!! I didn't bake or try to replace any of my 'comfort' foods for several months, I wanted to break the habit and addiction to all the harmful foods I was eating, foods I had 'used' for all of my life to make me 'feel better' (comfort eating!) Sugar especially. Sugar is found in virtually all processed foods, so I cut them ALL out altogether. Now, 20 months on, I am so relieved that I took that decision and am so much healthier than I have ever been. I love eating all the natural, healthy foods (yes, that includes natural fats like butter, cream and cheese!!) You will not find any harmful foods, additives or artficial ingredients in any of my baking. I have only recently started to add natural sweetener to some foods. I only use Erythritol as it doesn't raise your insulin levels, is safe as it is a natural ingredient and has no bitter after taste. It means sweet foods, like cakes, taste like the cake we are 'used to' without the damaging effects of sugar.
