So I get asked, “How do you make your sandwich loaf so soft and tall?”
You can find lots of recipes on the internet and of course, the ingredients are important, but it is also important how you develop the gluten.
I do one coil fold for my sandwich loaf and this gives the gluten more power to rise.
I give you a simple recipe to try at home:
400g flour
260g water
100g sourdough starter(if you use dry yeast just replace the starter with 50g water and 50g flour extra, and 7g of dry yeast)
10g honey(sugar/maple syrup)
7g salt
20-30g olive oil( you can use any oil or fat)
Mix the water, starter and flour in a mixing bowl. Leave it to rest for 20-30 min and add the rest ingredients. Give it a good knead by hand or using a standing mixer and let it rest for another 30 minutes. Now you can give it a set of CF and let it rest until it doubles the volume.
Once you’ve done all the steps your bread is ready to go into the tin loaf. Give it a nice shape and move it into the bread tin and let it rest until it rises. Preheat the oven at 250 °C for 15 min and when it is ready bake the bread for 25 min at 250 degrees with steam( add into a hot tray some water), and another 20-25min at 220 degrees C without the steam. Once is done take it out and move it on a cooling rack. let it cool down before slicing.
