So very happy to bake the first loaves with this year's harvest from .stringerandsons farm. First up, Olands wholemeal (top) and sifted. Second photo, Mariagertoba (same order). Very different volumes but both really nice to work with and absolutely delicious.
Still work to do to get the most out of these flours but I'm very happy with this first bake.

Soooo good. A mix of wholemeal spelt and wheat, with 35% white wheat. A good glug of olive oil and a dash of honey (3%)....
