A little something from my kitchen to yours 😊
I’ve had a few messages asking for the biscuit recipes, so I thought… why not share them here with everyone?
You can make them for your children, your grandchildren, or just for yourselves… why not? 😉
They’re from the Romanian website My Baby Food, and I’ve translated them into English below.
We’ve been making these for around 10 years, and they’ve come with us on pretty much every trip, big or small 🥹 Hopefully you’ll enjoy them as much as we do ❤️
🍌 Banana, almond & vanilla biscuits
• 100g mashed banana
• 150g plain flour
• 60g ground almonds
• 50g butter
• Seeds from 1 vanilla pod
Rub the butter into the flour and ground almonds until crumbly. Mix in the banana and vanilla, then chill for 30 minutes. Roll out on a lightly floured surface and cut into shapes.
You can brush them with beaten egg and sprinkle some seeds on top before baking. My girls prefer them plain 😊 The riper the banana, the sweeter the biscuits!
Bake on a lined baking tray at 170°C for 15–20 minutes, until golden.
🧀 Pecan & Parmesan biscuits
• 150g plain flour
• 60g softened butter
• 30g ground pecans — or any nuts you like
• 50g grated Parmesan
• 1 egg yolk
• 50g sour cream or full-fat yoghurt
Rub the butter into the flour until crumbly, then mix in the remaining ingredients.
If baking the same day, chill for about 30 minutes, then roll out and cut into shapes. Or shape the dough into a log, wrap and refrigerate overnight — then simply slice and bake. It’s easier to slice when it’s nice and firm 😊
Bake on a lined baking tray at 180°C for 25–30 minutes, until golden.
For both recipes, turn the biscuits over partway through baking. Baking time will depend on how thick you make them.
Enjoy the whole process… especially the eating part 😂❤️
