Burnt Basque Cheesecake
I am quite pleased with a first attempt at this, yesterday.
Made with cream cheese, sour cream, eggs vanilla, sugar and a little flour, its just one of several I'm testing.
Creamy, light and a deep richness from the caramelisation.
I'll be honest, the burnt reference didn't grab me, and looking over many recipes for this, the heavily caramelised top and sides, is indeed a significant part of the finished flavour, leaving it to rest for a day is recommended by some, to improve the flavour.
Some say it's good to try cooled to room temperature, from the oven.
Nigella serves it with a liquorice sauce and blackberries.
However your preference, its rather nice, and the hubster and son are very taken, so I will get a bit of practice in😁

Maple Cheesecake.
It's been some years since I first made this cheesecake, and determined to find time to go through my recipes, to update and tweak, I made it yesterday, as I'd written no notes with the recipe.
With a digestive and pecan nut base this is a lovely creamy and light baked recipe.👌
