PART 15 | Recreating lembas bread 🌿✨ This is all we have for the journey.

Ingredients:
150g plain flour
150g polenta
Pinch of salt
2 tsp baking powder
1 tbsp caster sugar
3 tbsp grated Parmesan cheese
1 tbsp parsley leaves
3 tbsp olive oil
2 eggs, beaten
300ml buttermilk

Method:
* Preheat oven to 190c
* Oil a 8x8inch square cake tin
* Mix together the flour, polenta, salt and baking powder into a large bowl
* Stir in the sugar, Parmesan & parsley
* Pour in the oil, eggs and buttermilk into the dry mixture
* Mix until combined
* Pour the mixture into the square tin and bake for 30 minutes
* Remove from the oven and transfer to a wire rack to cool slightly, before cutting into 16 squares

PART 14 | Biscuits from Pocahontas 🌾✨ Made these for John Smith tbh 😉

Ingredients:
* 100g butter
* 100g light brown soft sugar
* 50g golden syrup
* 63g rolled oats
* 62g jumbo oats
* 1/2 tsp bicarbonate of soda
* Pinch of sea salt
* 150 g plain flour

Method:
* Preheat the oven to 180ºc and line a tray with parchment paper �
* Mix butter, sugar and syrup in a bowl�
* Add the oats x2, bicarbonate of soda, salt and flour and mix again until combined. �
* Keep mixing to bring the dough together, or use your hands as it will be a little crumbly but can be moulded into a dough�
* Portion the cookies into heaped tablespoons (I use a medium ice cream scoop and then roll into balls. Mine are quite big so you may want to downsize for a crispier biscuit�
* Press each cookie down by half and place onto the lined tray�
* Bake in the oven for 15 minutes, and then leave to cool on a wire rack

PART 13 | Crème de la Edgar from The Aristocats 🥛 Looks innocent enough… 🙀

Ingredients:
Shortbread:
125g Caster Sugar
250g butter
375g plain flour
1 tsp vanilla

Method:
Cream together sugar and butter. Add in flavourings and flour. Mix until a dough forms. Pop in the fridge for an hour. Roll and shape. Bake at 180c for 12 minutes. Cool and enjoy.

PART 12 | Recreating Phoebe’s secret family cookie recipe 🍪 ‘Nestlé Tollhouse’ 😌

Ingredients:
260 g plain flour
1 teaspoon bicarbonate of soda
225 g butter, softened
150 g granulated sugar
165 g light brown sugar
Vanilla extract
2 large eggs
300 g chocolate chips

Method:
Mix butter with both sugars, add in eggs and vanilla once combined.
Add in flour and bicarbonate soda with chocolate chips and mix.
Put the mixture in the fridge for around an hour.
Heat oven to 180c.
Ball up the size of cookies you want, I used a large ice cream scoop. (Alter cooking times depending on size of cookies)
Bake for 12 minutes.
Once baked, leave to cool on a wire rack.
Enjoy!

PART 11 | Tiana’s beignets from The Princess and the Frog 🍩✨ Almost there…

Recipe:
Ingredients
* 80ml warm whole milk
* 66g granulated sugar
* 7g active dry yeast
* 240g plain flour
* 1 large egg, beaten
* 57g unsalted butter melted
* 1½ teaspoon vanilla extract
* Powdered sugar for dusting

Instructions
* In a small bowl, combine the milk, 1 teaspoon of sugar, and the yeast. Whisk together and let the yeast bloom for 10 minutes.
* Add the flour and remaining ⅓ cup of sugar to the bowl of a stand mixer fitted with a dough hook. Add the yeast mixture, egg, 2 tablespoons of the melted butter and vanilla. Mix on low speed until combined. Increase the speed to medium-low and mix until a smooth dough has formed, about 5 minutes.
* Shape the dough into a ball and transfer to a lightly oiled bowl. Cover with plastic wrap and let the dough rise in a warm spot until visibly puffed, 1 to 1½ hours.
* Stretch and roll the dough into a rectangle. Cut the dough how you want.
* Preheat the air fryer to 180c.
* Working in batches, leaving space between each, then brush evenly with some of the remaining 2 tablespoons of melted butter.
* Air fryer for 6 minutes or until puffed and golden brown. (Check them after 3 minutes and brush with more butter if they aren’t browning evenly.) Remove from the basket and immediately dust with powdered sugar.

PART 10 | Recreating Minny’s revenge pie from The Help 🥧 Southern baking, but make it personal 💩

Recipe:
Ingredients
* Store bought short crust pastry
* 362g caster sugar
* 24g plain flour
* 84g unsalted butter, melted
* 1 tsp vanilla extract
* 2 large eggs, room temperature
* 1 large egg yolk, room temperature
* 120g Nutella
* 120ml whole milk, room temperature

Method
* Cook pastry as per packet.
* To make the filling, combine the sugar and flour in a large mixing bowl, then add the melted butter and vanilla extract and combine.
* Add the eggs and egg yolk and gently stir until well combined, then add the chocolate hazelnut spread and gently stir until well combined.
* Add about half of the milk and gently stir until well combined, then add the remaining milk and gently stir until well combined.
* Pour the pie filling into the pie crust, then bake for 40 minutes at 180c.
* Remove the pie from the oven and set on a wire rack to cool for 1-2 hours, until room temperature.
* Carefully cover the pie and place in the fridge to cool completely, 3-4 hours.

Recipe:
2 eggs, 100g caster sugar, 100g plain flour, juice of 1 lemon, 3/4 tsp baking powder, 100g melted butter.

Method:
- Preheat the oven to 200C/400F/Gas 6.
- Whisk together the eggs and the sugar in a bowl until frothy.
- Lightly whisk in the remaining ingredients.
- Leave to stand for 20 minutes before carefully pouring into the prepared madeleine tray.
- Bake for 10 minutes.
- Transfer the madeleines to a wire rack and leave for a few minutes to cool slightly.
