Perfect dessert for easy supper !

And for all that Rhubarb !

300g ginger nuts whizzed with 120 g melted butter for the base in a 9” loose bottomed cake tin

Then whisked together 400g cream cheese with 300 mls double cream,100g icing sugar and a tsp Vanilla extract - whisk until thick then put onto the biscuit base and chill - a few hours is fine but overnight is perfect !

rhubarb- about 7 thick stems rhubarb in 1” pieces, roasted about 30 mins with 150- 200 g sugar and the juice of an orange, stir once gently mid cook !

Drain the rhubarb in a sieve and keep the reserved liquid !

Boil the juice to thicken slightly and cool

Last minute add the rhubarb on top and serve- the pass round the rhubarb syrup !

Roasting the Rhubarb like this makes a great breakfast compote !
