The Bijou Bakery

The Bijou Bakery Bespoke celebration cakes for all occasions I'm a small home business running my bakery from my "bijou" kitchen.

My passion is decorating cakes - individual cupcakes up to tiered wedding cakes - to bespoke designs, whether they be wild and bright or subtly pretty or strikingly beautiful. I use the best ingredients; real butter, fresh free range eggs, great flours and the finest extracts and believe it's just as important for the cake to taste as good it looks. Although I have been baking and decorating for a

long time now, I'm only just a becoming a business, so bare with me while I expand my portfolio and get pictures on my page cake by cake :-)

Ok guys, I need to be really honest here other wise i'll be worrying myself in to a state :-/ Out side of The Bijou Bakery I have just started a new job. Its full time, currently EXTREMELY mentally demanding and physically tiring. I am also still working my notice at my previous job, which is also very tiring (loooong days!). For eg, My next SINGLE day off is Tuesday, by which time i'll have done 60 hours straight. Obviously this wont be permanent as i'll ultimately only have 1 full time job, BUT, for now at least I'm going to have to turn down cake orders for the foreseeable future. I dont know how long it will take me to settle in new job, and as its full time even when I am settled its going to be a struggle to find time for cakes. I also have some personal stuff which takes up a lot of thoughts at times. I hope you all understand, but at the moment a steady guaranteed income is so important for me and my VERY supportive husband (he bought me custard creams!). If you've already paid, i will fulfil your order.

Separately, those orders awaiting invoice please get in touch as Paypal keeps insisting i'm in violation of something so I can arrange another method to pay if you still want your order.

Again, very sorry, but I just can't manage it all right now. Thank you so much xx

Hello! Here is the recipe for the Lemon Drizzle Frangipane Tart - I've called it frangipane as I used ground almonds, but its quite a small quantity and it is more of a lemon sponge in texture.

Lemon Drizzle Frangipane Tart

Pastry:
Blitz 250g plain flour, 125g chilled unsalted butter, 25g icing or caster sugar and 2 large egg yolks in a food processor. Add milk a tbsp at a time and blitz until dough comes together. Turn out onto lightly floured surface and kneed very briefly until dough is smooth. Wrap and chill in fridge for at least 30mins before using.

Heat oven to 190C, roll out pastry thinly (about 2mm) and carefully line a 23cm tart tin and trim away excess. Prick the base with a fork, then add a layer of parchment and freeze for 10mins. Add baking beans (or rice etc) and bake for 20mins, then remove beans and parchment and bake for another 5 mins. Set tart case aside and turn oven down to 170c.

Frangipane/Cake mix:
In the food processor, whiz together 150g each of self-raising flour, caster sugar and unsalted butter, 50g ground almonds, 3 large eggs, 1tsp lemon juice or extract and the zest of 2 lemons. It should take seconds to become a cake batter.

Put it all together:
Spoon a few tbsps of lemon curd over the pastry case, then spoon the cake mix over the top and spread gently so its even. Bake in the oven for 40mins.

Drizzle:
mix 150g granulated sugar with the juice of 2 lemons and pour carefully and slowly all over the hot tart. Leave to cool in the tin then remove and serve as you like!

At the weekend I went to a coffee shop (lets call it the 'red' brand as opposed to the 'green' brand) and had a lemon drizzle slice. It was yummy, but they're so expensive for such a tiny piece so today I invented and baked my own version - A Lemon Drizzle Frangipane Tart. If there is any interest i'd be happy to post the recipe up later?!! xx

Chocolate Cake!!! This is for my chocoholic husband and his team at work to eat during todays meeting! (It's his birthday tomorrow). Chocolate mud cake filled with chocolate buttercream, mini marshmallows and fudge pieces, then covered with chocolate buttercream and topped with dark chocolate ganache, then piled on top are marshmallows, maltesers, fudge pieces, milk dark and white chocolate crispies, popping candy, chocolate biscuits and a sprinkling of edible gold shimmer. Phew! Hope they're hungry...

I dont usually post pics of myself on here but this one that my hubby took of me setting up todays wedding cake made me chuckle... No idea what went on with the photo but look how tiny the cake looks!! It wasn't tiny at all! (It was a 10", 8" and 6" and to give an idea of hight, the 6" alone was 4.5inches so the whole thing was over a foot tall).
