Two posts in one day!

I fancied a summery bake so I made one of my favourites: coconut cake covered and filled with coconut buttercream and a fresh raspberry jam, finished off with some fresh rasps dotted on top of the desiccated coconut. It’s a very rustic finish as it’s just for us but very easy and quick to make. I think I got the coconut cake from BBC Good Food many years ago.

I don’t take cake orders anymore (I just don’t have time to commit as I teach full time and have family caring responsibilities) but I occasionally crack open the turntable and sprinkles for family and close friends.

My brother in law is turning 40 and he wanted chocolate so I baked four layers of Nigella Lawson’s old fashioned chocolate cake and filled it with chocolate buttercream, covering it in her soured cream chocolate icing. Yes, they are Maltesers polished with edible lustre.
