If you like apple and cinnamon then this Apple coffee (it’s an American coffee cake and does not have coffee in it) cake is the recipe for you. It’s moist with plenty of cinnamon and a crispy crumb. It would also be delicious still warm with custard or cream (and no glaze).

Another day, another catch up with a dear friend. I baked my as a traybake. She baked delicious coconut and white chocolate scones and we had a lovely tea in her beautiful summerhouse house (with a fan on full blast).

This is a lovely summer bake that’s a great way to use up egg whites. I sprinkle flaked almonds on top.

I baked this batch for a picnic with my outdoor swimming pals. It was easy to transport to the loch.

Two posts in one day!

I fancied a summery bake so I made one of my favourites: coconut cake covered and filled with coconut buttercream and a fresh raspberry jam, finished off with some fresh rasps dotted on top of the desiccated coconut. It’s a very rustic finish as it’s just for us but very easy and quick to make. I think I got the coconut cake from BBC Good Food many years ago.

Silly over proved loaf thanks to teenage taxi duty but it still tastes soft, fluffy, and delicious (even if it wasn’t de-gassed properly either…that one is on me entirely).
