Two posts in one day!
I fancied a summery bake so I made one of my favourites: coconut cake covered and filled with coconut buttercream and a fresh raspberry jam, finished off with some fresh rasps dotted on top of the desiccated coconut. It’s a very rustic finish as it’s just for us but very easy and quick to make. I think I got the coconut cake from BBC Good Food many years ago.
