•VEGAN MERINGUE KISSES RECIPE•
I used this recipe to pipe meringue kisses to top my birthday cake, however, this recipe could also be used to make a pavlova or smaller nest meringues.
Ingredients:
-120ml of aquafaba (liquid chickpeas are in).
-1/2 tsp of white wine vinegar (optional).
-135g icing sugar.
- Choice of food colouring.
Method:
1. Drain a can of chickpeas, collecting 120ml of aquafaba.
2. Using an electronic whisk, beat the aquafaba until you see stiff peaks and you are able to tip the bowl over your head without contents slipping or falling out (this is when it'll be the perfect consistency).
3. Add 1/2 tsp white wine vinegar to stabilise the mix (optional).
4. Add half of the icing sugar (135g) to the mix and whisk. Then proceed to add the other half and whisk.
5. Check the mix is still stiff enough (it is stiff enough if it can tip over your head without falling or slipping). If it isn't stiff enough, whisk the mix until it reaches this point.
6. Add the mix to a piping bag.
7. Using a teaspoon or tablespoon add a few drops of your choice of food colouring along the length of the bag (you can do this with as many colours as you like). This will create the swirl of colours.
8. Pipe small kisses onto a reusable plastic baking sheet (greaseproof paper if you don't have this).
9. Bake these at 100 degrees Celsius for 75 minutes. Once done, turn off the oven leave them in the oven for at least 60 minutes after baking. For best results leave them in the oven over night.
10. Serve in any way you wish!
This recipe is soo simple and tasty, you wouldn't even be able to tell they are vegan!
