Congratulations to Charlotte ( )and Gary Simpson on their wedding yesterday
This was the huge cake I was delivering yesterday and had to be transported in one piece due to the design which features a two sided ‘reveal’ feature. The front featuring beautiful sugar flowers cascading down the front….. and on the reverse, three silhouette pictures featuring some of the couples favourite things! The cake itself consisted of a base tier of Stacey, middle tier white chocolate and raspberry and top tier Black Forest. Seeing the couple have their pictures taken with a live owl while I was setting up was also really special . Encased in white chocolate ganache and covered in supreme sugarpaste by . Wishing Charlotte and Gary the very best for the future. .

So this is what I delivered in the heat on Saturday. A gorgeous three tiered cake comprising of gorgeous lemon sponge with lemon curd and lemon buttercream bottom tier, red velvet with cream cheese flavoured buttercream for the middle tier and decadent chocolate sponge with salted caramel sauce and chocolate buttercream for the top tier…. Apparently every bit was enjoyed which is so lovely to hear!

Wedding cake delivery….. thankfully I had pre-empted the heat today and the bride accommodated a ganache layer under her buttercream cake….. watch out for more pictures!!

Ahanaa always knows exactly what she wants for her birthday cake…. I’ve done at least three years worth now! Flavours always vary too! This gorgeous edible crown and rainbow butterfly cake was so lovely to make and I hear it went down very well with all of her friends! I used premium for all of the details. I can’t wait for next years cake!!

First time doing one of these this week! Lots of lessons learned as they aren’t as simple as they look!! This was a pistachio shell with vanilla buttercream and pistachio cream. It’s smelt amazing. Happy 16th birthday Jack!!

Sometimes having free rein on a cake design can be a dream. I used the opportunity yesterday to try out some techniques that I haven’t used before to create this for my lovely friends surprise 60th birthday party golf club. Wafer paper is really fashionable so not only the is bottom tier ( made of my favourite carrot cake recipe) wrapped in hundreds of slices of wafer paper, but the flowers are also made, each one by hand by steaming and shaping wafer paper so are technically edible! The top tier wrapped in textured sugarpaste and was a classic Victoria sponge. Was interesting cutting one of my own cakes too!! Was such a lovely evening!

Sorry if I’m a bit slower than usual in replying to any messages but I’ve been up all night waiting for an ambulance for my 80 year old mum who had fallen out of bed and couldn’t get up …. So catching up on some zzzzz’s! I hope you all have a lovely day!

Such pretty summery colours in this special cake. The colour matched the gorgeous lemon flavour!
